From the recipe collection of Tara Ippolito

Taco Bell Mexican pizza is an easy and delicious recipe perfect for a busy weekday dinner. They're my favorite thing to order from Taco Bell. When I can’t get myself to the restaurant chain, I love making these at home. The ingredients are simple and the recipe is super easy to put together.

Not to mention is absolutely delicious. This combination of ingredients is always a big with my family. We love Mexican inspired recipes like this one around here. And to be honest, I like just about anything that I can put sour cream on. These are a perfect choice for a delicious Tex Mex meal made right at home.

Ingredients

Here is everything you'll need to make this delicious meal. You can find the full ingredients list along with measurements and instructions on the recipe card below.

  • Flour Tortillas- Crisp up perfectly to hold the Tex Mex filling and topping.
  • Canola Oil- The perfect light oil for frying the tortillas.
  • Red Enchilada Sauce- Adds flavor while keeping the beef and cheese slightly moist.
  • Ground Beef- The protein packed center that keeps these pizzas hearty and filling.
  • Taco Seasoning- Seasons the beef with the classic taco flavors all in one packet.
  • Refried Beans- Creates a nice smooth contrast and compliments the beefy center.
  • Cheddar Cheese- Bring a rich, slightly salty flavor that helps bind the other ingredients together.
  • Monetary Jack Cheese- Adds a creamy, gooey texture without competing with the cheddar cheese.

How To Make It

Heres how to make these delicious Mexican pizzas. You can find the full ingredients list along with instructions on the recipe card below.

First, make the ground beef according to the directions on the taco seasoning packets and set it aside (use two packets instead of one for extra flavor). In a large skillet, heat the oil over medium high heat and fry the tortillas on both sides until they’re lightly crisped and golden brown. Let them drain and slightly cool on either paper towels or a wire rack. Add half of the fried tortillas down on a large parchment paper lined baking sheet.

Next, spread enchilada sauce and refried beans onto each one. Add the ground beef evenly on top of the refried beans followed by the half of the shredded cheeses. Top with another tortilla.

PRO TIP: Be sure to shred the cheese yourself and avoid the pre shredded stuff that comes in a bag. It will melt much better that way.

Next, add some more enchilada sauce and shredded cheese. Place them into the center rack of the oven until the cheese is melted. Add toppings of your choice and enjoy.

Can I Make These Spicier?

Yes, you absolutely can make them spicier. Try using a hot and spicy taco seasoning packet, add some chopped jalapeños or diced chili’s as a topping or use a spicy cheese like pepper jack.

What Can I Serve These With?

These pizzas are basically a whole meal all in one. They would best be served with a simple side salad or vegetable like Frozen Roasted Green Beans. Don't forget the chips and salsa.

What Toppings Can I Add?

Sour cream, cilantro, guacamole, salsa are all great options. Chopped tomatoes, black olives and shedded lettuce would all be wonderful additions, too.

Storage

Let the pizzas cool completely and place them into an air tight food storage container. They will last in the refrigerator for up to three days.
