Western breakfast sliders are a delicious way to start your morning made by scrambling eggs with ham, peppers, onions and cheese served with a sausage patty on sweet Hawaiian rolls.

How amazing do these western breakfast sliders look? On the weekends, we usually get bacon egg and cheese sandwiches from the local deli. Nothing beats a good BEC with SPK (NY/NJ people will understand what that means). This particular weekend, I decided to jazz out breakfast routine up a little with these delicious sliders.
My family loved them and I did, too. Western omelets are a person favorite of mine so this really hit the spot for the both of us. I love that these are super easy to make and a nice grab and go meal. They would be a perfect recipe to meal prep for the family. The flavors go together here so well. I will absolutely be making them again and again.
Ingredients

- Eggs- The star of the show! Makes these sliders light, fluffy and protein packed.
- Red Onion- Adds a mild, sweet and subtle crunch.
- Bell Pepper- Brings a pop of color and adds texture.
- Ham- Adds saltiness, flavor and protein.
- Swiss Cheese- Adds a subtle creaminess that doesn't compete with the American cheese.
- Kings Hawaiian Rolls- Just the right size to make these sliders individually irresistible.
- American Cheese Slices- Adds creaminess and helps hold the eggs together.
- Sausage Patties- The perfect size protein to add heartiness.
- Butter- Browns the top of the rolls perfectly.
- Everything Bagel Seasoning- Adds lots of flavors in one simple seasoning.
- Salt and Pepper- Enhances all the other ingredients
- Maple Syrup (optional)- Adds just the right amount of sweetness to compliment the savory sliders.
Instructions
Heres how to make these awesome breakfast sandwiches. You can find the full ingredients list along with measurements on the recipe card below.
Preheat the oven to 375°
First, spray a 9 x 13” baking dish with cooking spray, cut the Hawaiian rolls in half, and place the bottom half of the rolls into the baking dish. Then, in a medium sized bowl, whisk together the eggs, bell pepper and onion. Add them to a large skillet with melted butter and scramble them. Once the eggs are almost done cooking, turn the heat down to low, season them with salt and pepper and add the Swiss cheese. Continue stirring the eggs until they are completely cooked and the cheese is melted. (The cheese will help hold the eggs together)
PRO TIP: Be sure to cube or shred the cheese yourself and avoid the pre shredded stuff that comes in a bag. It will melt much better that way.

Then, add the sliced American cheese onto the bottom half of the Hawaiian rolls and evenly spread the scrambled egg mixture on top. Top each individual roll with a cooked sausage patty.
PRO TIP: Laying the cheese down will create a barrier and prevent the eggs from soaking into the bread and making it soggy.

Then, place the top half of the rolls on top. Brush on the melted butter and sprinkle the Everything But The Bagel Seasoning on top. Place the baking dish into the center rack of the oven for about 10-13 minutes. Please be sure to watch them because they can burn fast. Finally, cut the rolls into individual portions, serve alone or dunk them into some maple syrup and enjoy!
PRO TIP: Adding butter to the rolls will taste amazing but you will need to keep an eye on them so they don't burn. It can happen fast so start checking after that 10 minute mark.

Can I Make These Ahead Of Time?
Yes, you absolutely can. Just assemble everything the night before, cover and refrigerate. Bake in the morning as directed
Storage
Let the sliders cool completely and place them into a food safe, air tight container. They will last in the fridge for up to three days.

Western Breakfast Sliders Recipe
Ingredients
- 2 Tbs Butter
- 7 Large Eggs
- ¼ Cup Red Onion, diced
- ¼ Cup Green Bell Pepper, diced
- ¼ Cup Ham, diced
- ½ Cup Swiss Cheese, shredded or diced
- 5-6 Slices American Cheese
- 12 Sausage Patties, cooked according to the package. (I used Banquet Brown N Serve Vermont Maple)
- 1 Package Hawaiian Rolls
- Salt and Pepper to taste
- Maple Syrup for dunkin (optional)
Topping
- 4 Tbs Butter, melted
- 2-4 Tbs Everything Bagel Seasoning
Instructions

- Add the sliced American cheese onto the bottom half of the Hawaiian rolls and top them with the cooked scrambled eggs and sausage patties.
- Place the top half of the rolls on top, brush them with the melted butter and sprinkle them with the Everything But The Bagel seasoning.
- Place the baking dish into the center rack of the oven for about 10-13 minutes or until the top is lightly golden brown. Please be sure to watch them because they can burn fast.
- Finally, cut the rolls into individual portions, serve alone or dunk them into some maple syrup and enjoy!
