Pizza Cupcakes
From the recipe collection of Tara Ippolito
Pizza cupcakes are individual pieces of heaven.

I made these in my muffin tin a couple of weeks ago but never uploaded the recipe.
Only because I wasn’t sure what to call them.
Then when I was at the Mets game a couple of days ago I saw an item on their menu that said pizza cupcakes.

The picture beside it was exactly what I had made! So pizza cupcakes it is.
These are so cute and fun for kids. My sons loved them!
Because I used premade pizza dough and jarred sauce they couldn’t have been easier, too.

They’re easily customized, too.
You can add whatever kind of toppings you’d like.

These pizza cupcakes are super easy and quick to make.
I think these are perfect for a busy weekday dinner or snack.
There’s nothing to making them at all.

We will for sure be making these pizza cupcakes again and again.
I’m sure if you give them a try that you’ll love them, too.

Can I use different dough for these pizza cupcakes?
Whatever dough you’d like to use is up to you.
If you have a homemade pizza dough recipe you’d like to use go for it.

I used Pillsbury Mini Pizza Crust.
I think it’s a new product that I really wanted to try.
I’m a fan of Pillsbury refrigerated doughs so that’s what I usually use.

Their regular pizza dough, crescent rolls or biscuits would all work.
The crescent dough and biscuits will give you a little more of a light and buttery version but it would absolutely work.
What tomato sauce should I use for these pizza cupcakes?
If you have a your own homemade sauce or would like to make your own that’s great.

I have a wonderful recipe for basic tomato sauce here if you’d like one.
Jarred sauce works just fine, too.

I used Rao’s Homemade Marinara but any brand you like is totally fine.
Do I need to shred the cheese myself?
Yes and no. Of course you don’t have to. You’re your own boss.

I would recommend grating the mozzarella cheese from the block every time.
Preshredded cheese in a bag that you get at the grocery store has certain chemicals in it like cellulose that also prevent it from melting well.

If you grate the cheese yourself it will melt much better in the oven.
What toppings can I put on these Pizza Cupcakes?
The topping possibilities for these pizza muffins are endless.
I make plain and pepperoni pizzas but choose whatever you want.

The great thing about this is that they can be individually customized.
So each person eating can have whatever toppings they want.
Some ideas are:
- Pepperoni
- Meatball
- Ground sausage

- Peppers and onions
- Mushrooms
- Black olives
How can I store these pizza cupcakes?
If you actually manage have any leftover pizza cupcakes without them being completely devoured they’re easily stored.

Just place them in a air tight container or wrap them with some plastic wrap and pop them in the fridge.
They will stay fresh up to 3 days.
Other premade dough recipes
If you like taking shortcuts by using premade doughs like in this recipe here are some other recipes you’ll love:

Pizza Cupcake Ingredients

- Pillsbury Mini Pizza Crusts
- Cooking spray
- Mozzarella cheese, shredded
- Tomato sauce
- Pepperoni (optional)
Instructions:
First spray your muffin tin with cooking spray.

Then open your mini pizza crusts and place them into each section of the muffin tin.

Push them down with your fingers until they create a little cup.

Now add some mozzarella cheese first. This is just to make sure they don’t get sorry.
Next add some tomato sauce.

Then add some cheese again.

After that you can add any toppings you’d like. I chose a little pepperoni.

Now place them in the oven and cook them according to the directions on the back of the can of Pillsbury Mini Pizza Crusts Package.

Let them cool slightly and carefully pop them out with your fingers or a butter knife.

Finally serve warm and enjoy!
My son wanted to pretend he was missing a tooth with a piece of olive haha.

We all loved these so much!
