This is the best broccoli cheddar soup recipe that I have ever tried and I’ve hung onto this one for years.

I love broccoli cheddar soup, and try to order it every chance that I get. I can’t tell you how many times I’ve gotten this at Panera bread .
There was definitely a time period where this was the only thing I wanted to eat. Unfortunately, it’s not always feasible to be making Panera bread runs every time a soup craving kicks in.

I tried a lot of recipes for broccoli and cheddar soup until I finally found this one. It really truly is the best!
The broccoli florettes are cooked so perfectly together with the melted cheddar cheese.
Even my two picky little boys like this one along with all the other members of my family. it’s always a huge hit.

It reminds me of the version that I used to get at Panera bread all the time. But this is even better because we can make it at home and have lots and lots of leftovers for the next day.
The ingredients are simple and the recipe is very easy to put together.

I like to make this on cold fall or winter days when everyone in my house could use a little warming up.?

The Best Broccoli Cheddar Soup Variations
I like this recipe for broccoli cheddar soup made just the way it is, but here are some ways to change it up if you’d like to.

- Fresh Broccoli- fresh broccoli florettes is the best choice for the soup. I do not recommend using frozen broccoli because it holds a lot of water in your soup will be too runny.
- Broccoli Size- I like a combination of larger broccoli florettes mixed with smaller pieces. This is completely based off personal preference. If you’d like to keep the soup more consistent feel free to chop all the broccoli into bite-size pieces making it easier to eat with a spoon.

- Broth- Vegetable or chicken broth can both be used for this recipe.
- Cheese-Nothing goes better together than broccoli and cheddar cheese, but if you’d like to swap the cheese out for another kind, you are absolutely welcome to. Just be sure to shred the cheese yourself because it will melt into the soup much better that way. ?

- Butter
- Diced Onion
- Shredded Carrot
- Minced Garlic
- Flour
- Vegetable Broth
- Broccoli Crowns, chopped
- Heavy Cream
- Shredded Cheddar Cheese
- Salt, Pepper, Garlic Powder
Instructions
First, in a large pot, sauté the diced onion and shredded carrot in a little bit of olive oil.

Then, lightly season them with salt and pepper and once the vegetables are soft, add the minced garlic and sauté for another minute.

Next, add the flower and stir it into the vegetables for two minutes.

Now, slowly stir in the vegetable broth and let the soup thicken up over medium heat for about 3 minutes.

Then, stir in the chopped broccoli and put a lid on the pot. Let the broccoli cook for 15 minutes.

Next, slowly stir in the heavy cream.

Now, stir in the shredded cheese and season the soup with salt, pepper and garlic powder.

Finally, let the soup simmer for about 10 minutes. Serve warm and enjoy!

- 1 cup Carrots, shredded
- 4 cloves Garlic, minced
- ¼ cup Flour
- 2 cups Vegetable Broth
- 2 cups Heavy Cream
- 3 cups Broccoli Florets, chopped into small and medium sized pieces
- 3 cups Cheddar Cheese, shredded
- Salt and Pepper to taste
- 1 tbs Garlic Powder
Instructions
- In a large pot, sauté the diced onion and shredded carrot in a little bit of olive oil.
