CHOCOLATE RASPBERRY COFFEE CAKE

Chocolate raspberry coffee cake is a delicious breakfast, dessert or snack made with boxed chocolate cake mix covered in a layer of raspberry jam and the perfect amount of crumbs.

This raspberry coffee cake is one of my personal all time favorite desserts.

This recipe inspiration is from my mother and she has been making a version of this for as long as I can remember.

Her’s may actually be more of a crumb cake, technically. She always puts a very thick layer of crumbs on her’s that is so so good.

As amazing as it is, for me, it’s just a little bit difficult to eat sometimes.

So, I pulled back on the crumbs just a tiny bit and here we have this delicious coffee cake.

The chocolate cake mix, raspberry jam, and incredible sweet crumbly topping all go together so well in this recipe.

It’s the perfect ratio of cake to crumbs. The raspberry jam really gives this cake a unique flavor, too.

This is definitely a recipe that people will be talking about. I’ve made this for so many events from holidays like Easter brunch and even just relaxing weekends at home.

It’s always a huge hit, no matter where I take it and everyone is constantly asking me for the full recipe. Using boxed cake mix makes this a breeze to put together, too.

Theres nothing better than a nice big slice of this next to a hot cup of coffee in the morning.

Chocolate Raspberry Coffee Cake Variations

I like this coffee cake recipe made just the way it is but here are some ways to change it up if you’d like to.

  • Cake- White or French Vanilla cake mix are ok substitutions for the chocolate cake.

Chocolate Raspberry Coffee Cake Ingredients

  • Boxed Chocolate Cake Mix (plus the ingredients to make it)
  • Raspberry Jam
  • Melted Butter, slightly cooled
  • Brown Sugar
  • Flour
  • Cinnamon

Instructions

Preheat the oven to 350°

First, make the cake according to the directions on the box and place it into the oven for 15-20 minutes.

Now, let it cool for 10 minutes.

Next, add the raspberry jam to microwave safe bowl and microwave it for about 30 seconds or until it’s warm. This is just to make the jam easier to spread.

Then, pour the jam over the half baked cake and using the back of a spoon, spread it out evenly.

Now, in a separate bowl, mix together the four, brown sugar and cinnamon until it’s evenly combined.

Next, melt the butter and let it cool for about 10 minutes before stirring it into the dry ingredients.

Now, using your fingers, gently break the crumbs up into small pieces and sprinkle them evenly over the cake.

Next, place the cake back into the oven for another 20 minutes or until the cake is cooked all the way through.

Finally, let it cool completely before slicing and serving. Enjoy!

    2.5 sticks of butter?? 20 tablespoons of butter, is that a mistake?
