I’ve had a lot of different versions of this recipe but I can honestly say that this is the best Rotel dip, ever. I’ve been eating this classic appetizer for years and years. It always hits the spot! After trying many versions, I’ve officially landed on this as being the best one. It’s so creamy, cheesy and smooth all because of the secret ingredient. One can of evaporated milk.
It might sound a little odd at first but this is the way that resultants get their queso to be oh so good. It’s something small that can be added to make a really big difference. This is the party appetizer that everyone is going to keep coming back for. It’s perfect for any get together, movie night and of course, it’s not a football Sunday without the Rotel Dip.

- Evaporated Milk- The secret ingredient that will loosen the cheese and keep the consistency restaurant style.

Instructions

First, in a large cast iron skillet or pan, brown the ground beef and make it according to the directions on the back of the taco seasoning packet. (We’re using two packets instead of one for extra flavor). Stir in the Velveeta until it’s melted into the ground beef. Then stir in the evaporated milk and Rotel.
PRO TIP: Cube the Velveeta so it melts easily into the sauce.

Next, turn the heat to low and stir in the shredded cheddar and Monterey Jack cheese until the cheese melts into the dip. Stir in the softened cream cheese until melted. Finally, garnish with your favorite toppings, serve warm and enjoy!
PRO TIP: Be sure to shred the cheese yourself and avoid the pre shredded stuff that comes in a bag. It will melt much better that way.

Can I Make This Ahead Of Time?
Yes, this dip can be made ahead of time. Make it completely, let it cool, cover and refrigerate for up to two days. Reheat slowly on the stovetop or microwave.
What Should I Serve This With?
This dip can be served with tortilla chips, Fritos Scoops, soft pretzels or even over baked potatoes or nachos.
Storage
Let the dip cool completely and place it into an air tight container. It will last in the fridge for up to three days.

The Best Rotel Dip Recipe
Ingredients
- 1 Pound Ground Beef
- 2 Oz Taco Seasoning
- 6 Oz Velveeta, cubed
- ½ Cup Cheddar Cheese, hand shredded
- ½ Cup Monterey Jack Cheese, hand shredded
- 8 Oz Cream Cheese, softened
- 12 Oz Evaporated Milk
- 10 Oz Original Rotel
- Fresh Parsley, Sour Cream and Salsa, for toppings (optional)
- Serve with Tortilla Chips
