Hawaiian BBQ chicken flatbread pizza is such an easy and delicious weekday dinner. This recipe is a great reminder that sometimes pineapple actually does belong on pizza. Using the flatbread and rotisserie chicken saves a bunch of prep time and allows me to take a major shortcut. Flatbread recipes like this are an absolute life saver. They’re super easy to put together and my family loves them.
Who doesn’t like pizza? It’s a no brainer for when your family needs to eat but you really aren’t in the mood to spend and hour in the kitchen. I can have this on the table in no time at all with very little effort on my part. What a win! Don’t forget that these can be totally customizable, too. Just add or take away whatever kind of toppings that you’d like.

- BBQ Sauce
- Colby Jack Cheese
- Rotisserie Chicken
- Red Onion
- Diced Pineapple
- Green Onion
- Salt
- Pepper

Preheat the oven to 400°
First, spread a thin layer of olive oil on top of the flatbread and place it onto a parchment paper lined baking sheet. Place the baking sheet into the center rack of the oven for 5 minutes or until it slightly crisps up.
PRO TIP: You want to make sure the flat bread gets a little toasty before adding the toppings so it stays firm.

Now, spread a thin layer of BBQ onto the surface of the flatbread and sprinkle the Colby Jack on top. In a small bowl, toss the cubed chicken in with the salt, pepper and garlic powder and evenly distribute the chicken on top of the shredded cheese. Top with more Colby cheese onto top of the chicken.
PRO TIP: Shred the cheese yourself and avoid the pre shredded stuff that comes in a bag. It will melt much better that way.

Then, evenly distribute the sliced red onion and pineapple onto top of the chicken and cheese. Drizzle with a little more BBQ sauce and place it onto the center rack of the oven for 10-15 minutes or until the cheese is melted. Finally, sprinkle with the green onions. Serve warm and enjoy!

Yes, absolutely you can. This recipe will work on any kind of pizza dough that you'd like.
Storage
Let the pizza cool completely and place it into an air tight container. It will last in the fridge for up to three days. This will freeze well, too. Just place into a freezer safe air tight container and it will last for up to three months.

Ingredients
- 1 Rectangular Flatbread
- 1 Tbs Olive Oil
- ½ Cup BBQ Sauce (divided)
- 1 ¼ Cup Colby Jack Cheese, hand shredded
- 1 Cup Rotisserie Chicken, shredded or cubed
- ¼ Cup Red Onion, thinly sliced
- ¼ Cup Pineapple, diced small
- 2 Tbs Green Onion, chopped
- Salt and Pepper to taste
- 1 teaspoon Garlic Powder
Instructions
- Preheat the oven to 400°

- Spread ¼ cup BBQ onto the surface of the flatbread and sprinkle on 1 Cup of Colby Jack cheese.
- In a small bowl, toss the cubed chicken in with the salt, pepper and garlic powder. Evenly distribute the chicken on top of the shredded cheese.
- Sprinkle ¼ Cup of the cheese onto top of the chicken.
- Evenly distribute the sliced red onion and pineapple chunks onto top of the chicken and cheese.
- Drizzle the top with the rest of the BBQ sauce and place it onto the center rack of the oven for 10-15 minutes or until the cheese is melted.
- Sprinkle with the green onions. Serve warm and enjoy.
