These crockpot crack chicken sandwiches have become a go to summer dinner for my family and I.

I don’t know about you, but what I cook and how I cook always takes a big shift in the summer time. Once the seasons change, we’re always so busy doing warm weather activities.

Who’s got the time to cook? These chicken sandwiches are the perfect thing to make on those busy summer nights.

You can just toss everything right into the crockpot, set it and forget it. They’ll be ready by the time you get back home from the pool.

We like to keep it simple and serve these with some Ranch Butter Corn and a side of potato chips or Garlic Parmesan Fries.

They’re a hit every time! My family just loves them.

Even though we tend to make these a lot in the summer months, they are wonderful all year round, too.

Give them a try on any night and they’ll be the star of the show. How could anyone resist pulled chicken with bacon, cheddar cheese and ranch? Yum!

Crockpot Crack Chicken Sandwiches Variations

I like this recipe made just the way it is, but here are some ways to change it up if you’d like to.

  • Cooking Times- Cook these on low for 6 hours or on high for 3.
  • Chicken- Both chicken thighs or breast would be ok to use here.
  • Servings- Serve these on a brioche bun or in lettuce wraps for a lower carb option.
  • Cheese- Feel free to experiment with different cheeses for this recipe. Just be sure to shred the cheese yourself because it will melt much better that way. ?

Crockpot Crack Chicken Ingredients

  • Chicken Breasts
  • Chicken Broth
  • Ranch Seasoning
  • Bacon, cooked & crumbled
  • Cheddar Cheese, hand shredded
  • Cream Cheese
  • Chopped Green Onion
  • Brioche Buns

Instructions

First, add the chicken breast, chicken broth, ranch seasoning and cream cheese to the crockpot.

Now, cover it and set it on low for 6 hours.

Then, remove the chicken, shred it up and place it back into the crockpot.

Next, add the crumbled bacon, shredded cheese and green onions.

Now, mix everything together until it’s smooth and combined.

Finally, evenly distribute the filling between the brioche buns, serve warm and enjoy!

Ingredients
  

  • 2-3 Large Chicken Breast
  • ½ Cup Chicken Broth
  • 2 Oz Ranch Seasoning
  • 8 Oz Cream Cheese
  • 6-8 Strips Bacon, cooked and crumbled
  • 1 Cup Cheddar Cheese, hand shredded
  • ¼ Cup Green Onions, chopped
  • 6-8 Brioche Buns

Instructions
 

  • Add the chicken breast, chicken broth, ranch seasoning and cream cheese to the crockpot.
  • Cover it and set the time to 6 hours on low.
  • Remove the chicken, shred it up and place it back into the crockpot.
  • Ad the crumbled bacon, shredded cheese and green onions and stir everything together until its smooth and well combined.
  • Evenly distribute the filling between the brioche buns, serve warm and enjoy!
