COWBOY BISCUIT CASSEROLE

Cowboy biscuit casserole is a delicious weekday dinner made with layers of buttery biscuits, taco seasoned ground beef and a cheesy sour cream topping.

If there’s one thing that I can promise you, it’s that you are going to love this cowboy biscuit casserole!

There are so many versions of this recipe circulating around the internet right now and I can confidently say that this one is the best.

How do I know that? My brother Mark who’s also my unofficial food critic (and loves to bust chops) had absolutely nothing to say besides rave reviews. What a huge compliment.

This recipe kind of reminds me of a Shepards Pie or of that Cheddar Bay Biscuit casserole that was making its rounds a few years ago. But this one’s got a southwestern flare.

Make this for a busy weekday dinner or one one of those nights that you’re really in the mood for some delicious, stick to your ribs comfort food. It’s going to be a huge hit!

This is a delicious, no fuss meal that will make everyone in your home full and happy. I hope you enjoy it!

Recipe Quick Tips

  • Seasoning- Add two packets of taco seasoning to the ground beef to add lots of extra flavor.
  • Cheddar Bay Biscuit Mix- This mix comes with a packet to spread on top of the biscuits once done. Since the mix is going into the bottom and not the top, I like to add that packet right into the mix. Why waste all of that flavor?!
  • Cheese- Make sure to shred the cheese yourself and avoid the pre-shredded stuff that comes in a bag. It will melt much better that way.

Cowboy Biscuit Casserole Variations

I like this casserole made just the way it is, but here are some ways to change it up if you’d like to.

  • Meat- I prefer ground beef but ground chicken and turkey work here, too.
  • Cheese-Any kind of shredded cheese is ok to use for this recipe.
  • Biscuit Mix- Use wherever brand of boxed biscuits you’d like to. It all works.
  • Oven Placement- Place this into the center rack of the oven so the heat can evenly distribute around the top and bottom of the casserole and ensure everything is cooked perfectly.
  • Veggies- Add a can or bag of vegetables to the beef mixture for some extra crunch and flavor, too if you’d like.

Cowboy Biscuit Casserole Ingredients

  • Red Lobster Cheddar Bay Biscuit Mix
  • Olive Oil
  • Onion, chopped
  • Garlic, chopped
  • Ground Beef
  • Taco Seasoning
  • Sour Cream
  • Mayonnaise
  • Hand Shredded Cheddar Cheese
  • Salt, Pepper, Garlic Powder, Dried Parsley

Instructions

Preheat the oven to 350°

First, in a large bowl, add the biscuit mix with water and stir to combine. If using Red Lobster Cheddar Bay Biscuit Mix, I like to add the seasoning packet that comes in the box for the topping right into the mix for extra flavor. Then, push the mixture down into the bottom of a greased 9 x 13” baking dish using your fingers. Careful, it will be a little sticky.

Now, in a large skillet, sauté the chopped garlic and onion in a little olive oil until soft.

Next, add the ground beef and cook it according to the directions on the back of the taco seasoning packet. We’re using two packets for extra flavor instead of one!

Then, add the beef mixture on top of the biscuits.

Now, in a medium sized bowl, add the sour cream, mayonnaise and cheddar cheese. Season it with salt, pepper and garlic powder and mix everything together. Pour the mixture on top of the mixture and spread it out so that it’s flat and even.

Then, sprinkle more cheese on the top and place it into the center rack of the oven for 30-35 minutes.

Finally, let the casserole rest for 5-10 minutes sprinkle the top with dried parsley, and enjoy!

Ingredients
  

  • 1 Box Red Lobster Cheddar Bay Biscuit Mix (Plus the water on the package instructions and flavoring packet)
  • 1 Tbs Olive Oil
  • ½ Onion, chopped
  • 3 Cloves Garlic, chopped
  • 1-1.5 Pounds Ground Beef
  • 2 Oz Taco Seasoning
  • 1 Cup Sour Cream
  • ½ Cup Mayonnaise
  • 2 Cups Cheddar Cheese, hand shredded (divided)
  • Salt and Pepper to taste
  • 1 Tbs Garlic Powder

Instructions

    This casserole was very easy to make but it didn't taste like I thought it would.
    I made it exactly like the recipe called for.There were no comments on the site so I'm not sure what others think. I have always had good success with all the recipes from the al dente diva.
