This Creamy Boursin Salmon with Spinach is one of those dinners that looks and tastes impressive but is actually incredibly easy to make. The salmon gets a quick sear before being added to a creamy Garlic & Fine Herbs Boursin sauce with fresh spinach.
I love recipes like this because Boursin does so much of the work for you. Serve this with some roasted potatoes, rice or crusty bread and you have a delicious dinner on the table without a ton of effort.

How To Make It

- Pat the salmon fillets dry with a paper towel. Season the salmon on both sides with salt, pepper, paprika, garlic powder and onion powder. Heat the remaining olive oil in a large skillet over medium high heat. Add the salmon and sear it for about 2–3 minutes per side, or until golden and cooked to your liking. Remove the salmon from the skillet and set it aside.

- Reduce the heat to medium-low and add the butter to the same skillet. Once the butter has melted, add the spinach and gently stir it until wilted. Add the heavy cream and Boursin cheese. Stir until the cheese has completely melted and the sauce is smooth and creamy.

- Taste the sauce and add additional salt and pepper if needed. Return the salmon to the skillet and spoon over the sauce on top. Let everything warm together for another minute or two, then serve warm.

PRO TIPS
- Pat The Salmon Dry – Removing excess moisture helps the salmon develop a better sear.
- Use A Large Skillet – You want enough room to comfortably fit all five salmon fillets without overcrowding them.
- Don’t Overcook The Salmon – The salmon will warm again once it’s returned to the sauce, so keep that in mind while searing.
- Keep The Sauce On Lower Heat – Once you add the Boursin and cream, avoid very high heat so the sauce stays smooth and creamy.
- Adjust The Sauce – If you’d like it a little thinner, stir in an extra splash of heavy cream.
VARIATIONS
- Change The Boursin – Garlic & Fine Herbs is my favorite here, but another savory Boursin flavor can easily be substituted.
- Add Mushrooms – Sauté sliced mushrooms in the skillet before making the sauce.
- Add Some Heat – Sprinkle in a pinch of red pepper flakes for a little kick.
- Swap The Greens – Kale can be used instead of spinach; just give it a little more time to soften.
WHAT TO SERVE WITH IT
This salmon is especially good served with roasted baby potatoes, mashed potatoes, rice or pasta because they soak up all that creamy Boursin sauce. Add a simple vegetable like asparagus, broccoli or green beans for an easy complete dinner.
STORAGE & REHEATING
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat the salmon gently in a skillet over low heat until warmed through, adding a small splash of heavy cream if the sauce has thickened. You can also microwave individual portions in short intervals, being careful not to overheat the salmon.
