Preheat the oven to 400° with the baking sheet in it.
First, add the cut potatoes into a medium sized bowl. Drizzle with olive oil and add the onion powder, garlic powder, paprika, parsley, thyme, salt and pepper. Toss everything together until the potatoes are evenly coated.
NOTE: Feel free to add any other spices and seasonings that you'd like to here.

Now, carefully remove the preheated baking dish from the oven. Add the potatoes and spread them out evenly on the baking sheet. Place them into the center rack of the oven for about 15 minutes. This recipe works on pretty much any kind of potato you can think of. Even sweet potatoes work here. I usually go for Yukon because thats what I prefer but choose whatever you'd like or have on hand.
Can I Peel The Potatoes
Yes, you definitely can. I love how crispy the skin gets but if you'd like to peel them, be my guest. Its all about preference here.
What Should I Serve These With?
This is one of those side dishes that go with just about anything. Serve them at any holiday along side a Glazed Ham or for a casual dinner at home with Crockpot Smothered Chicken Legs and Frozen Roasted Green Beans.

Let the potatoes cool completely and place them into a food safe air tight container. They will last in the fridge for up to three days.
