Ingredients
Heres everything you'll need to make this delicious chili dip. You can find the full ingredients list along with measurements and instructions on the recipe card below.
- Decorative 2.5 QT Crockpot- The perfect size for party dips like this. This crockpot is also eye catching and looks good enough to serve any appetizer out of. I purchased mine HERE.
- Canned Hormel Chili With The Beans- The star of the show! This canned chili is just the right consistency and the beans make it a more hearty and filling choice.
- Cream Cheese- Smooths the dip out and keeps it creamy.
- Velveeta- Keeps the dip silky smooth and creamy while adding an additional layer of cheese flavor.
- Original Rotel- Adds acidity and chunky tomato texture while thinning the dip out so its scoopable.
- Cheddar Cheese- Adds a gooey layer of salty, cheesy flavor.
- Tortilla Chips- I love Tostitos Cantina Chips for this. They go great with the chili and cheese.
Instructions
Heres how to make this awesome appetizer. You can find the the full ingredients list along with instructions on the recipe card below.
First, add the chili, cream cheese, velveeta, rotel, and cheddar cheese into the crockpot. Place the lid on top and set the crockpot to low for 1.5 hours.
PRO TIP: Get a block of cheddar cheese and avoid the pre shredded stuff that comes in a bag. It will melt much better that way.

Then, give everything a big stir and place the lid back on for another 1.5 hours. Servewith tortilla chips and enjoy!
NOTE: Turn the crockpot to the warm setting and serve the dip right inside of it. You wont need to reheat the dip and it will stay the perfect consistency.

What Can I Serve This With?
This dip is great to serve with tortilla chips ( I like Tostitos Cantina Chips), Fritos Scoops or Corn Chips.
How Can I Add Some Spiciness To This?
Adding some heat to this is super easy. Just choose a spicier cheese like pepper jack and add a can of diced green chilis. You can also use a can of Hot Rotel.
Do I Really Need To Use Velveeta?
The Velveeta will keep the dip nice and creamy and give it a really silky consistency. If you would like to omit it, just replace it with an equal amount of cheddar or the cheese of your choice.
Storage
Let the dip cool completely and place it into an air tight storage container. It will last in the refrigerator for up to three days. This freezes well, too. Just place it into a freezer safe air tight container an it will last for up to three months.
