This Crockpot Creamy Chicken Pasta is one of those meals that tastes like you worked all day on it, but it’s mostly just stirring and letting the slow cooker do all the work for you. It doesn't get much easier than that.
The pasta cooks right in the crockpot with broth, milk, tomatoes, and cream cheese. The pasta soaks up all that delicious flavor and creates an incredibly rich and velvety sauce. Once everything is tender, a handful of Monterey Jack melts right into the pasta to make it extra creamy and irresistible. This is a family favorite of ours for sure.

First, add the pasta to the crockpot. Pour in the diced tomatoes with their juice, cream of chicken soup, milk, shredded chicken and chicken broth. Add the cream cheese block and the minced garlic. Season with salt, pepper, Italian seasoning and garlic powder.
PRO TIP: Cube the cream cheese to make it even easier to melt and incorporate later.

Now, stir everything together slightly so the pasta is mostly coated with the liquid. Cover and cook on high for 1.5- 2 hours, stirring once or twice during cooking if possible, until the pasta is tender.
NOTE: Check on the pasta after 1.5 hours to see if its done cooking. Some crockpots may take the whole 2 hours but you want to be careful not to overcook it too much or the pasta will become mushy.

Finally, once the pasta is cooked, stir in the Monterey Jack cheese until it’s melted into the dish and fully incorporated. Serve hot and enjoy!
PRO TIP: Be sure to shred the cheese yourself and avoid the pre shredded stuff that comes in a bag. It will melt much better that way.

How Can I Make This Less Salty?
If you’re watching your sodium or just sensitive to salt, this recipe can be easily adjusted. Try using a low sodium can of cream of chicken soup and low sodium chicken broth. Water can also be replaced for the chicken broth, also.
Storage
Let the pasta cool completely and place it into a food safe air tight container. It will last in the fridge for up to three days.
