What cheese should I use for this easy buffalo chicken dip?
I really like a combination of cheddar cheese and mozzarella for this dip recipe but the choice is yours.
This recipe isn’t spicy but definitely has a little kick from the buffalo wing sauce.

If you’d like to spice it up even more, try some pepper jack cheese.
Any kind of cheese you’d like to use here will work. Just be sure to shred the cheese yourself.
Do I really have to shred the cheese myself?
Yes, absolutely!
This is the one thing that I’d really urge you not to take a shortcut on.

Pre-shredded bagged cheese has chemicals in it like cellulose.
This keeps the cheese from clumping but it also prevents it from melting properly.

Shred the cheese off the block and the chicken dip will be much creamier.
Easy Buffalo chicken dip variations
After seeing some different versions of this recipe posted online that I make mine a little different.
Some people use Franks Red Hot sauce instead of wing sauce in their recipes. Feel free to use that if you’d like.

Instead of the dry ranch seasoning packet, I’ve also seen people use about a half a cup of either blue cheese or ranch dressing mixed into the dip before it’s baked.
This makes it a little less thick than my version. Feel free to give that a try, also.

Tips for softening cream cheese
Lots of recipes call for softened cream cheese and there are a few ways that you can do it.
First, just take it out of the fridge and toss it onto the counter for about 30 minutes. That’s all there is to it! The cream cheese will be perfect after that time.

Second, you can add it (still sealed) to a bowl of warm water. This method will take even faster. About 10-15 minutes.
And last but not least, you can always use the trusty microwave. Take the cream cheese out of the package and place it onto a plate. Microwave it for 30 seconds – 1 minute and you’re done!
