Fiesta ranch dip is made with sour cream, a dry rack packet, corn, black beans, shredded cheese and just a couple other simple ingredients for a delicious, crowd pleasing appetizer.

This fiesta ranch dip is such a great appetizer or snack for any occasion you can think of.

I love making this for parties, BBQ’s, pool days and family get togethers, too.

This recipe can be made year round but I find it extra delicious during the hot summer months.

Its just the thing to cool you off when you’re not in the mood for something hot and heavy.

The sour cream, beans, Rotel and other ingredients just blend together so nicely for a perfect warm weather snack.

This dip recipe is super easy to make and guaranteed to have your guests coming back for more.

Fiesta Ranch Dip Variations

I like this recipe as it is, but here are some ways to change it up if you’d like.

  • Spice- use a hot can of Rotel tomatoes, add dash or two of hot sauce or choose a spicy cheese like pepper jack to add some heat to this dip.
  • Cheese- feel free to use any kind of cheese that you’d like. Just be sure to hand shred it off the block. It will make the dip creamier and more flavorful.
  • Corn- a can of regular or sweet corn will be ok to use if you can’t find the Mexican Style one.
  • Ranch- an original dry ranch flavored packet or Hidden Valley Fiesta Ranch packet would work here.
  • Toppings- Add shredded lettuce, diced tomatoes, jalapenos or whatever else you’d like to add as toppings.

Fiesta ranch dip ingredients

  • Sour cream
  • Dry ranch packet or Hidden Valley Fiesta Ranch Dip
  • Mexican Style Canned corn, drained
  • Black beans. Rinsed and drained
  • Rotel, drained
  • Cheddar cheese, hand shredded
  • Chives, for garnish (optional)
  • Tortilla chips

Instructions

First, in a large bowl, add the sour cream, ranch packet, corn, black beans, Rotel and cheddar cheese.

Now, stir everything together until it’s evenly combined.

Then, cover the bowl and place it in the fridge for at least one hour for the flavors to blend.

Next, stir the dip together one last time and add it to a serving bowl.

Now, garnish the top with fresh chives and serve with tortilla chips. Enjoy!

  • 16 oz Sour Cream
  • 1 oz Dry Ranch Packet
  • 11 oz Mexican Style Corn, drained
  • 15 oz Black Beans, rinsed and drained
  • 10 oz Rotel, drained
  • 1 cup Cheddar Cheese, hand shredded
  • Chives for garnish, optional
  • Tortila chips

Instructions

  • Now, stir everything together until it’s evenly combined.
  • Then, cover the bowl and place it in the fridge for at least one hour for the flavors to blend.
  • Next, stir the dip together one last time and add it to a serving bowl.
  • Now, garnish the top with fresh chives and serve with tortilla chips. Enjoy!
