This Mexican macaroni salad is absolutely delicious and the perfect side dish to bring to your next BBQ or summer party.

The colors and flavors of this pasta salad are so vibrant and all go together so nicely.
My family and friends just love a good pasta salad. I usually make my Traditional Macaroni Salad or Hawaiian Macaroni salad for summer parties and they’re always a big hit.

Once the weather starts to warm up here in Jersey, I start looking for new and exciting recipes and came across this one.
What an absolute score! This was the perfect recipe to add to my summer salad collection.
This would be perfect for any cookout, potluck or warm weather party coming up. Your guests will love it.

Mexican Macaroni Salad Variations
I like this macaroni salad made just the way it is, but here are some ways to change it up if you’d like to.

- Macaroni- instead of using elbow macaroni, any small shaped pasta would be ok to use.
- Corn- Grill or roast your corn for even better flavor.
- Cheese- Switch the cheese out for your favorite.
- Add Ins- Add extra jalapeños for some more heat, black beans, cilantro or whatever else you’d like.

Mexican Macaroni Salad Ingredients

- Elbow Macaroni, boiled in salted water
- Diced Ham
- Chopped Celery
- Shredded Carrot
- Cubed Muenster Cheese
- Diced Red Onion
- Canned Corn (drained)
- Sour Cream
- Mayonnaise
- Diced Pickled Jalapeños (plus some juice from the jar)
- Salt and Pepper to taste
Instructions
First, in a large bowl, mix together the sour cream, mayonnaise, juice from the pickled Jalapeños, salt and pepper.

Now, add the cooked elbow macaroni and stir the dressing into the macaroni until it’s evenly coated.

Next, add the diced ham, celery, shredded carrot, cubed Munster cheese, diced red onion, jalapeños and corn.

Then, gently toss everything together until it’s evenly combined and coated in the dressing.

Now, either serve immediately or place it into the fridge to let the flavors combine.

Finally, serve and enjoy!

Ingredients
- 3 Cups Elbow Macaroni, boiled in salted water
- 2 Cups Deli Ham, diced
- ½ Cup Celery, chopped
- 1 Large Carrot, shredded
- 1 Cup Munster Cheese, diced into small cubes
- ¼ Cup Red Onion, diced
- 15 Oz Corn, drained
- 2 Tbs Pickled Jalapeno
Dressing
- ½ Cup Sour Cream
- 1 Cup Mayonnaise
- 2 Tbs Pickled Jalapeno Juice- from the jar
- Salt and Pepper to taste
Instructions
- In a large bowl, mix together the ingredients for the dressing.
- Add the cooked elbow macaroni and stir the dressing into the macaroni until it’s evenly coated.
- Add the diced ham, celery, shredded carrot, cubed Munster cheese, diced red onion, jalapeños and corn. Gently toss everything together until it’s evenly combined and coated in the dressing.
- Either serve this immediately or place it into the fridge to let the flavors combine.
- Finally, serve and enjoy!
