Sausage stuffed cubanelle peppers are a delicious and easy to make dinner the whole family will love.

If you haven’t had cubanelle peppers, they are very similar to bell peppers. They’re just not as thick and a little bit longer.
Cubanelle peppers tend to get a little “curly” at the bottom. So be sure to select peppers that are nice and long. Those will be perfect for stuffing.

They go wonderfully with the ground sausage and breadcrumb filling, too.
Stuffed peppers are one of my favorite recipes. I make Stuffed Pepper Casserole and Stuffed Pepper Soup very often at my house.

As much as I love them both, sometimes you just want the real deal. Am I right? That’s where this recipe comes in.

Sausage Stuffed Cubanelle Peppers Variations
I like this stuffed pepper recipe made just the way it is, but here are some ways to change it up if you’d like to.

- Peppers- If you can’t find cubanelle peppers, bell peppers will do.
- Meat- Ground beef can be substituted for the ground sausage.
- Sauce- Use jarred tomato sauce or your own. I have a great recipe for Simple Italian Tomato Sauce if you’d like it.

- Cubanelle Peppers- cleaned with the tops cut off and seeds removed
- Ground Sweet Italian Sausage
- Onion, chopped
- Garlic, minced
- Italian Seasoned Breadcrumbs
- Grated Parmesan Cheese
- Shredded Basil
- Eggs
- Tomato Sauce
- Olive Oil
- Salt, Pepper, Garlic Powder & Italian Seasoning
Instructions
Preheat the oven to 350°
First, heat the olive oil in a large skillet and add the ground sausage, chopped onion and garlic.

Next, lightly season it with salt and pepper and brown the sausage, breaking it up into small pieces as it cooks. Let it cool slightly.

Then, in a large bowl, add the cooked sausage mixture.

Now, add the seasoned breadcrumbs, eggs, Parmesan cheese, basil, and olive oil.

Next, seasoning, it with salt, pepper, garlic powder, and Italian seasoning, and stir everything together until it’s evenly combined.

Next, evenly distribute the sausage and breadcrumb mixture into each of the cubanelle peppers. Be sure to push the filling down so that it’s tightly packed into each pepper.

Then, in a large skillet, heat up a little olive oil over medium high heat and add the peppers.

Working in batches, cook the peppers on each side just until the skin is blistered. Remove them from the oil when done and set aside. ?

Now, add about a cup and a half of tomato sauce into the bottom of a 9 x 13” baking dish.

Then, place the stuffed pepper side-by-side into the baking dish on top of the tomato sauce.

Next, sprinkle the top of the peppers with a little bit of salt and evenly distribute a half a cup of tomato sauce on top of each pepper and a little bit of Parmesan cheese.

Now, place them in the center rack of the oven for 30 minutes.

Finally, let the peppers cool, slightly serve warm and enjoy.

- 5 large Cubanelle Peppers- cleaned with the tops cut off and seeds removed
- 8 tbs tbs Olive Oil (divided)
- 1 pound Ground Sweet Italian Sausage
- ½ Onion, chooped
- 4 cloves Garlic, chopped
- 1 cup Italian Seasoned Breadcrumbs
- ¾ cup Grated Parmesan Cheese (divided)
- ¼ cup Fresh Basil, shredded
- 2 Eggs
- 2 cups Tomato Sauce
- Salt and Pepper to taste
- 1 tbs Garlic Poweder
- 1 tbs Italian Seasoning
Instructions
- Preheat the oven to 350°
- Heat 2 tbs of olive oil in a large skillet and add the ground sausage, chopped onion and garlic. Lghtly season it with salt and pepper and brown the sausage, breaking it up into small pieces as it cooks. Let it cool slightly.
- In a large bowl, add the cooked sausage mixture, seasoned breadcrumbs, Parmesan cheese, eggs, basil, and 4 tbs olive oil. Seasoning, it with salt, pepper, garlic powder, and Italian seasoning, and stir everything together until it’s evenly combined.
