Sausage Stuffed Cubanelle Peppers

From the recipe collection of Tara Ippolito

Sausage stuffed cubanelle peppers are a delicious and easy to make dinner the whole family will love.

If you haven’t had cubanelle peppers, they are very similar to bell peppers. They’re just not as thick and a little bit longer.

Cubanelle peppers tend to get a little “curly” at the bottom. So be sure to select peppers that are nice and long. Those will be perfect for stuffing.

They go wonderfully with the ground sausage and breadcrumb filling, too.

Stuffed peppers are one of my favorite recipes. I make Stuffed Pepper Casserole and Stuffed Pepper Soup very often at my house.

As much as I love them both, sometimes you just want the real deal. Am I right? That’s where this recipe comes in.

Therese something so comforting about waking up early to get some Tomato Sauce simmering on the stove. Then stuffing those peppers and smelling everything cooking together in the oven.

It’s just the best! These peppers hold their shape very well, too. Making any leftovers even better to enjoy the enjoy the next day.

I hope you give this recipe a try. If you do, I know you’ll love it just as much as my family and I do.

  • Peppers- If you can’t find cubanelle peppers, bell peppers will do.
  • Meat- Ground beef can be substituted for the ground sausage.
  • Sauce- Use jarred tomato sauce or your own. I have a great recipe for Simple Italian Tomato Sauce if you’d like it.
