This sausage tortellini soup is rich, cozy and super easy to put together. It tastes like its been simmering on the stove all day when really, it can be on the table in under 30 minutes. How perfect for a busy weekday dinner on a cold day. The sweet italian sausage, cheese tortellini, crushed tomatoes and splash of cream make it hearty without being too heavy. Add fresh spinach and parmesan and you've to a delicious one pot dinner that everyone will love.
My mother used to make this for my siblings and I all the time growing it. Hers was a little different but the concept was the same. It was truly one of my favorites. Instructions

In a large stock pot, heat the olive oil over medium high heat and add the onion. Lightly season it with salt and pepper. Saute until the onion is soft. Add the sausage and break it down into small pieces using a wooden spoon as it cooks. Once the sausage is browned completely, add the chopped garlic ands stir for one minute.
NOTE: Spicy ground sausage can also be used if you'd like to add a little heat.

Add the chicken broth and crushed tomatoes. Season with salt, pepper, garlic powder and Italian seasoning and stir everything together. Add the spinach in in bunches and stir it into the soup until the spinach is wilted.

Slowly pour in heavy cream and parmesan cheese. Stir everything together and let the soup cook over medium heat for about 5 minutes. Carefully add in the cheese tortellini and let them cook for about 3 - 5 minutes or until they are plump and have floated to the surface. Re season if needed and enjoy!
PRO TIP: Microwave the heavy cream for 15 seconds (or allow it to reach room temperature) before adding it to the soup so it can easily incorporate.

What Can I Serve This With?
This soup is a meal in and of itself. You really don't need to serve this with anything besides a side salad and maybe some Homemade Garlic Bread.
What Kind Of Tortellini Should I Use?
Refrigerated cheese tortellini works best for this recipe but and flavor filling would be ok to use. Frozen tortellini works well, too, and dried tortellini can be used also, but needs to cook a little longer.
Can This Soup Be Made Ahead Of Time?
Yes, you can definitely prepare this soup ahead of time. For the best texture, wait to add the tortellini until the soup is ready to serve.
Storage
Let the soup cool completely and place it into an air tight container. It will last in the refrigerator for up to three days. This freezes well, too! Just place it into a freezer safe air tight container and it will last for up to three months.

- 15 Oz Bag Refrigerated Cheese Tortellini
- 2 Tbs Olive Oil
- 1 Large Yellow Onion, chopped
- 4 Cloves Garlic, chopped
- 1 Lb Ground Sweet Italian Sausage
- 3 Cups Chicken Broth
- 28 Oz Can Crushed Tomatoes
- 2 Cups Fresh Spinach, rinsed and cleaned
- ½ Cup Heavy Cream (room temperature)
- ½ Cup Parmesan Cheese
- Salt and Pepper to taste
- 2 Tbs Italian Seasoning
- 1 Tbs Garlic Powder
