STUFFED COWBOY MEATLOAF

Cowboy Meatloaf is a delicious spin on the classic comfort food made with a mix of ground beef and pork that’s stuffed with cheddar cheese and baked with a BBQ sauce topping.

Stuffed Cowboy Meatloaf

Stuffed cowboy meatloaf is guaranteed way for me to get my kids excited about dinner.

We love meatloaf around here. I make my Old Fashioned Meatloaf, Copycat Cracker Barrel Meatloaf and Stovetop Stuffing Meatloaf all the time during the cool fall and winter months.

There’s just something so comforting about this meal. My Mother used to make it for my siblings and I all the time growing up, too.

I loved it then and I love it now. Luckily for me, so does my family.

This recipe is a delicious spin on an old classic. The melty cheese in the center and BBQ sauce topping really just take this comfort food classic to the next level.

I know everyone in my house will be happy once they know this is what will be served for dinner.

We usually like to eat this with a vegetable like Roasted Garlic Parmesan Broccoli or Garlic Parmesan Corn On The Cobb and Sour Cream Mashed Potatoes.

I’m getting hungry just thinking about it! It’s a great stick to your ribs dinner that’s perfect for the fall but it’s just as delicious all year round, too.

Stuffed Cowboy Meatloaf Variations

I like this meatloaf recipe made just the way it is, but here are some ways to change it up if you’d like to.

  • Meat- I do prefer ground beef and pork for this recipe, but you can use ground turkey or chicken if you’d like to.
  • Cheese- Any kind of cheese would be ok to use here. Just be sure to shred the cheese yourself because it will melt much better that way.

Stuffed Cowboy Meatloaf Ingredients

  • Ground Beef
  • Ground Pork
  • Olive Oil
  • Diced Bell Pepper
  • Diced Onion
  • Eggs
  • Worcestershire Sauce
  • Seasoned Breadcrumbs
  • Milk
  • Hand Shredded Cheddar Cheese
  • Salt, Pepper, Garlic Powder, parsley for garnish (optional)

Instructions

Preheat the oven to °350

First, in a large skillet, sauté the peppers and onions in the olive oil until soft and season them with salt and pepper. Let them cool slightly.

Now, in a large bowl, add the ground beef, ground pork, eggs, breadcrumbs, milk, Worcestershire sauce and the sautéed peppers and onions.

Next, season meatloaf mixture with salt, pepper and garlic powder and mix everything together until it’s evenly combined.

Quick tip- don’t over mix the meat or it will become too dense. Just mix into its combined then stop.

Then, add half of the meatloaf mixture into a baking dish and form it into a flat meatloaf shape.

Now, using your fingers, gently push down into the center to form a small dip/ hole. Do not push all the way to the bottom.

Next, add the shredded cheese into the center.

Then, add the rest of the ground beef mixture to the top.

Now, carefully pat the meatloaf mixture down onto the sides to seal the cheese into the center.

Next, brush the BBQ sauce onto the top and place it into the center rack of the oven for 40 minutes.

Then, carefully remove the baking dish from the oven and brush the top of the meatloaf with more BBQ sauce.

Now, place the baking dish back into center rack of the oven for another 25 minutes.

Finally, let the meatloaf rest for 10 minutes, garnish with parsley, serve warm and enjoy!

  • 2 Pounds Ground Beef
  • 1 Pound Ground Pork
  • 2 Tbs Olive Oil
  • 1 Small Green Bell Pepper, diced
  • 1 Small White or Yellow Onion, diced
  • 2 Large Eggs
  • 1 Cup Seasoned Breadcrumbs
  • ½ Cup Milk
  • 2 Tbs Worcestershire Sauce
  • 1 Cup Cheddar Cheese, hand shredded
  • 1 Cup Barbecue Sauce (divided)
  • Salt and Pepper, to taste
  • 1 Tbs Garlic Powder
  • Parsley for garnish, optional

Instructions

  • Carefully remove the baking dish from the oven and brush the top of the meatloaf with the remaining BBQ sauce. Place the baking dish back into center rack of the oven for another 25 minutes.
  • Finally, let the meatloaf rest for 10 minutes, garnish with parsley, serve warm and enjoy!

    Love Meatloaf, and the Ground Beef and Pork Sausage meat combo is the perfect meat for the recipe! As a optional change-up for the meat mixture, I added chopped mushrooms (Canned Stems & Pieces work well) just because our family loves mushrooms too!
