If you’ve been on social media lately, you’ve probably seen this viral dirty spaghetti popping up everywhere. It’s one of those recipes that looks simple, but once you taste it, you get why people are obsessed. It’s hearty, bold, and has that stick to your ribs comfort food vibe.

Instead of a traditional red sauce, this version builds a rich, almost gravy like base with beef broth, tomato paste, and a roux style thickener that clings to the pasta. It’s cozy, it’s filling, and it’s the type of meal people make once and immediately add to their rotation.

What Is Dirty Spaghetti?

Dirty spaghetti is a Southern inspired pasta dish similar in concept to dirty rice. It's made with seasoned ground meat, vegetables, and a rich, thickened sauce that coats the pasta instead of a traditional marinara.

The name comes from the color and texture of the dish. The seasoned meat and thickened sauce give the pasta a darker, “dirty” look—packed with flavor and not meant to be pretty, just delicious.

  • Tomato Paste-Concentrated richness with a slight tang—gives the sauce body and depth.
  • Flour-Thickens the sauce into that signature “dirty” consistency.
  • Beef Broth- Creates a rich, savory sauce that replaces traditional marinara.
  • Spaghetti-Absorbs all that flavor and turns it into a full, satisfying meal.
  • Salt- Enhances all the flavors.

How To Make It

First, in a large skillet, heat the olive oil over medium high heat. Add the onion and bell pepper and sauté until softened. Add the ground beef, cook until browned and drain any excess grease. Season the beef mixture with salt, pepper, garlic powder, and Cajun seasoning and stir well to combined.

Add the garlic and cook for about 1 minute until fragrant. Stir in the tomato paste and let it cook for 2–3 minutes. Sprinkle in the flour and stir continuously for 3–4 minutes. Slowly pour in the beef broth, stirring constantly to avoid lumps.

PRO TIP: Cook the tomato paste for a few minutes before adding liquid. It deepens the flavor and removes any bitterness.

Finally, let the mixture simmer until it thickens into a rich, gravy like sauce. Add the cooked spaghetti directly into the skillet and toss until fully coated.

PRO TIP: the sauce is too thick, add a splash of reserved pasta water to loosen it up to your desired consistency.

What If The Sauce Gets Too Thick?

That’s exactly why you reserve pasta water. Add a little at a time to loosen the sauce until it’s perfectly silky and coats the pasta to your liking.

  • 2 Tbs Olive Oil
  • ½ Cup Onion, diced
  • ¼ Cup Green Bell Pepper, diced
  • ¼ Cup Red Bell Pepper, diced
  • 3 Cloves Garlic, minced
  • 1 Pound Ground Beef
  • 4 Tbs Tomato Paste
  • 4 Tbs Flour
  • 3 Cups Beef Broth
  • 1 Pound Spaghetti, cooked in salted water reserve 1 Cup of pasta water
  • Salt and Pepper to taste
  • 1 teaspoon Garlic Powder
  • 1 Tbs Cajun Seasoning

Instructions
 

  • In a large skillet, heat the olive oil over medium high heat and add the onion and bell pepper and sauté until softened, about 5–7 min. Add the ground beef and cook until browned. Drain any excess grease. Season the beef mixture with salt, pepper, garlic powder, and Cajun seasoning and stir well to combine.
  • Add the garlic and cook for about 1 minute until fragrant. Stir in the tomato paste and let it cook for 2–3 minutes to deepen the flavor. Sprinkle in the flour and stir continuously for 3–4 minutes to cook out the raw flour taste. Slowly pour in the beef broth, stirring constantly to avoid lumps.
  • Let the mixture simmer for about 5–8 minutes, or until it thickens into a rich, gravy like sauce. Add the cooked spaghetti directly into the skillet and toss until fully coated. If the sauce is too thick, slowly pour in the pasta water until it reaches the consistency you are looking for.
