Viral Dirty Spaghetti is a rich, savory pasta made with seasoned ground beef, sautéed peppers and onions, and a thick, beefy tomato based sauce that coats every strand of spaghetti for the perfect bite.

If you’ve been on social media lately, you’ve probably seen this viral dirty spaghetti popping up everywhere. It’s one of those recipes that looks simple, but once you taste it, you get why people are obsessed. It’s hearty, bold, and has that stick to your ribs comfort food vibe.
Instead of a traditional red sauce, this version builds a rich, almost gravy like base with beef broth, tomato paste, and a roux style thickener that clings to the pasta. It’s cozy, it’s filling, and it’s the type of meal people make once and immediately add to their rotation.
What Is Dirty Spaghetti?
Dirty spaghetti is a Southern inspired pasta dish similar in concept to dirty rice. It's made with seasoned ground meat, vegetables, and a rich, thickened sauce that coats the pasta instead of a traditional marinara.
The name comes from the color and texture of the dish. The seasoned meat and thickened sauce give the pasta a darker, “dirty” look—packed with flavor and not meant to be pretty, just delicious.
Ingredients
Here’s everything you’ll need to make this delicious pasta. You can find the full ingredients list along with measurements and instructions on the recipe card below.
- Olive Oil-Helps sauté the vegetables and builds the base layer of flavor.
- Onion- Adds sweetness and depth as it softens.
- Bell Pepper- Brings a subtle sweetness and classic Southern-style flavor.
- Ground Beef-The hearty, savory backbone of the dish.
- Garlic- Adds that punchy, aromatic flavor that ties everything together.
- Tomato Paste-Concentrated richness with a slight tang—gives the sauce body and depth.
- Flour-Thickens the sauce into that signature “dirty” consistency.
- Beef Broth- Creates a rich, savory sauce that replaces traditional marinara.
- Spaghetti-Absorbs all that flavor and turns it into a full, satisfying meal.
- Salt- Enhances all the flavors.
- Pepper- Adds a subtle heat and balance.
- Garlic Powder:-Boosts the savory garlic flavor throughout the dish.
- Cajun Seasoning-Brings warmth, spice, and that Southern-inspired kick that makes this dish “dirty.” I use Slap Yo Mama Seasoning.
How To Make It
Here’s how to make this delicious spaghetti. You can find the full ingredients list along with instructions on the recipe card below.
First, in a large skillet, heat the olive oil over medium high heat. Add the onion and bell pepper and sauté until softened. Add the ground beef, cook until browned and drain any excess grease. Season the beef mixture with salt, pepper, garlic powder, and Cajun seasoning and stir well to combined.
Add the garlic and cook for about 1 minute until fragrant. Stir in the tomato paste and let it cook for 2–3 minutes. Sprinkle in the flour and stir continuously for 3–4 minutes. Slowly pour in the beef broth, stirring constantly to avoid lumps.
PRO TIP: Cook the tomato paste for a few minutes before adding liquid. It deepens the flavor and removes any bitterness.
Finally, let the mixture simmer until it thickens into a rich, gravy like sauce. Add the cooked spaghetti directly into the skillet and toss until fully coated.
PRO TIP: the sauce is too thick, add a splash of reserved pasta water to loosen it up to your desired consistency.
What If The Sauce Gets Too Thick?
That’s exactly why you reserve pasta water. Add a little at a time to loosen the sauce until it’s perfectly silky and coats the pasta to your liking.
What Should I Serve This With?
This pasta would be best serve with simple side dishes like a garden salad and Homemade Italian Garlic Bread.
Storage
Let the pasta cool completely and place it into a food safe air tight container. It will last in the fridge for up to three days.

This is my new favorite spaghetti recipe! I love it, and I’m sure my family will also. I made it yesterday, and I’m warming it up for lunch now. I did add a pound of Italian sausage. I cannot say how good this is. It will be hard to make my regular spaghetti any longer. Thank you so much for this recipe!

I have combined your recipe with one other and I love it. Today I'm making it pretty much the same but have added andouille sausage and used blackened seasoning on all the protein.

Followed the recipe except using 1/2 cup of red pepper, no green pepper and I made fresh angel hair pasta and cooked it in the sauce for 3 minutes. Everyone absolutely loved it. Making it again tonight!
