I love this recipe as it is, but here are some way to change it up if you’d like to.

- Pancake Mix- Instead of Pioneer Sweet Cream Mix, Pioneer regular pancake mix would work.
- Add Ins- this breakfast recipe is great because it can be completely customized to fit a crowds preferences. That said, add whatever fruits or favorite pancake flavors that you’d like.
- Toppings- try syrup, butter or even some whipped cream as some great topping options.

Pioneer Sweet Cream Mini Pancake Ingredients

- Pioneer Sweet Cream Baking, Waffle and Pancake Mix
- Water
- Cooking Spray
- Strawberries, chopped into small pieces
- Blueberries, chopped into small pieces
- Bananas, chopped into small pieces
- Cooked bacon, chopped into small pieces
- Maple Shyrup
- Mini Chocolate Chips
Instructions
Preheat the oven to 350°
First, in a large bowl, make the Pioneer pancake mix by following the directions on the back of the package and combining one package of dry mix with water.

Now, coat a mini muffin tin with cooking spray.

Then, using a cookie scooper or a spoon, fill each of the mini muffin tin holes with the pancake mix.

Now, add the strawberries, blueberries, bananas, syrup, chocolate chips and bacon onto each individual pancake mix cups.

Next, using a toothpick, swirl the fillings into the pancake mix.

Then, place the mini muffin tin into the preheated oven for about 10 minutes or until the pancakes are cooked all the way through.

Now, let them cool slightly and carefully remove the mini pancakes from the muffin tin with a butter knife.

Finally, serve warm and with syrup. Enjoy!
