Stuffed pepper soup is such a fun spin on the traditional Italian dish.

We love eating soup in the fall and winter when the weather starts to take a turn here in New Jersey.
There’s nothing better than a nice warm bowl of comfort food to warm you up when it’s cold outside.

I’m always looking for new recipes to add to my collection and this one made the permanent rotation list immediately.
My whole family absolutely loved it and it was an instant hit with all of us.

Aside from being incredibly delicious, it was also super easy to put together, too.
It can be thrown together in no time with very little effort.

Stuffed Pepper Soup Variations
I like this recipe made just the way it is, but here are some ways to change it up if you’d like to.

- Peppers- use different color peppers to add some nice color to the soup.
- Meat- any kind of ground meet would be wonderful here. Try chicken, turkey or veal. Use any combination or stick to one.
- Vegetables- Add extra vegetables like sliced mushrooms, diced zucchini or anything else you can think of.
- Rice- use the rice of your choice but please be sure to adjust the cook time accordingly.

Stuffed Pepper Soup Ingredients

- Olive Oil
- Onion, chopped
- Red Bell Pepper, chopped
- Green Bell Pepper, chopped
- Garlic, minced
- Ground Beef
- Ground Sausage
- Tomato Paste
- Canned Diced Tomatoes (with the juice)
- Beef Broth
- Jasmine Minute Rice or any rice of your choice
- Salt, Pepper, Garlic Powder and Italian Seasoning
Instructions
First, heat the oil in a large pot and add the chopped onion and bell peppers.

Now, lightly season them with salt and pepper and sauté them until they begin to get soft.

Next, add the ground beef, sausage and garlic.

Then, break the meat into small pieces with a wooden spoon or spatula and cook it until the meat has browned and cooked all the way through.

Now, stir in the tomato paste.

Next, add the whole can of diced tomatoes (including the juice) and beef broth.

Then, raise the heat until the liquid begins to gently boil and season it with salt, pepper, Italian seasoning and garlic powder.

Now, add the rice and turn the heat low and give everything a nice big stir.

Next, put the lid on and let the rice cook until the rice is soft and ready to eat. This could take anywhere from 5 to 30 minutes depending on what rice you choose.

Finally, stir in the Parmesan cheese, serve warm and enjoy!

- 2 tbs Olive Oil

- 1 Green Bell Pepper, chopped
- 1 Red Bell Pepper, chopped
- 4 cloves Garlic, minced
- ½ pound Ground Beef
- ½ pound Ground Sweet or Hot Italian Sausage
- 6 oz Tomato Paste
- 15.5 oz can Diced Tomatoes (with the juice)
- 3 cups Beef Broth
- 1 cup Jasmine Minute Rice
- ½ cup Parmesan Cheese
- Salt and Pepper to taste
- 1 tbs Garlic Powder
- 1 tbs Italian Seasoning
Instructions
- First, heat the oil in a large pot and add the chopped onion and bell peppers. Lightly season them with salt and pepper and sauté them until they begin to get soft.

- Stir in the tomato paste, and add the whole can of diced tomatoes (including the juice) and beef broth.
- Raise the heat until the liquid begins to gently boil and season it with salt, pepper, Italian seasoning and garlic powder.
- Add the rice and turn the heat low and give everything a nice big stir. Put the lid on and let the rice cook until its soft and ready to eat. This should take about 5 minutes
- Finally, stir in the Parmesan cheese, serve warm and enjoy!
