Stuffed Pepper Soup

From the recipe collection of Tara Ippolito

Stuffed pepper soup is such a fun spin on the traditional Italian dish.

We love eating soup in the fall and winter when the weather starts to take a turn here in New Jersey.

There’s nothing better than a nice warm bowl of comfort food to warm you up when it’s cold outside.

I’m always looking for new recipes to add to my collection and this one made the permanent rotation list immediately.

My whole family absolutely loved it and it was an instant hit with all of us.

Aside from being incredibly delicious, it was also super easy to put together, too.

It can be thrown together in no time with very little effort.

Recipes like this are a wonderful choice for a busy weekday dinner.

I hope you give this recipe a try. If you do, I know you’ll love it just as much as my family and I do.

Fast. Simple. Delicious.

Stuffed Pepper Soup Variations

I like this recipe made just the way it is, but here are some ways to change it up if you’d like to.

  • Peppers- use different color peppers to add some nice color to the soup.
  • Meat- any kind of ground meet would be wonderful here. Try chicken, turkey or veal. Use any combination or stick to one.
  • Vegetables- Add extra vegetables like sliced mushrooms, diced zucchini or anything else you can think of.
  • Rice- use the rice of your choice but please be sure to adjust the cook time accordingly.
