This eggnog poke cake is such an easy and delicious holiday treat.

If you’re looking for something simple to throw together in no time, this is the perfect recipe for you.

Using boxed spice cake mix is a huge, time saving short cut. I love how easy this is to make.

The flavors of the spice cake and eggnog so so perfectly together. It’s such a nice festive combination.

Eggnog Poke Cake Variations

I like this recipe for eggnog poke cake made just the way it is but here are some ways to change it up if you’d like to.

  • Cake Mix- white, yellow or French vanilla cake mix can be used instead of spiced cake mix if you’d prefer.
  • Pudding- instant vanilla or French vanilla pudding would both be ok to use.
  • Toppings- Add candied nuts, cranberries or any other festive topping you’d like to.

Eggnog Poke Cake Ingredients

  • Spice Cake Mix (plus the ingredients to make it)
  • Eggnog
  • Instant Vanilla Pudding
  • Cool Whip
  • Cinnamon

Instructions

First, make the spice cake mix according to the directions on the package and let it cool and using the back of a wooden spoon, poke holes into the cake about an inch and a half apart.

Next, in a medium sized bowl, beat the eggnog and vanilla instant pudding together until it begins to thicken.

Then, pour the mixture over the cake and spread it into the holes.

Now, add the cool whip and carefully spread it on top of the cake.

Next, sprinkle the top with some ground cinnamon and place it into the fridge for at least an hour so the pudding can set.

Finally, serve cold and enjoy!
