Summer is in full swing and you need this Greek tortellini salad for your next cookout.

I made this for my families 4th Of July party and everyone loved it. It was a little something different from the pasta salads that I usually serve.
My Mothers Famous Tortellini Salad has been our go to summer party side dish since as long as I can remember. It’s absolutely delicious with more of an Italian spin.

But, it sure is nice to change it up every once in a while. This was the perfect recipe to do that, too.
All the flavors of a Greek salad mixed with the tortellini pasta were just a fresh and refreshing combination.

This recipe would be perfect to bring to any summer BBQ, picnic or any warm weather event that you can think of.

Greek Tortellini Salad Variations
I like this recipe for tortellini salad made just the way it is, but here are some ways to change it up if you’d like to.

- Greek Dressing- Save a step in this recipe and buy bottled Greek dressing if you’d like.
- Tortellini- refrigerated or frozen tortellini would both be OK to use here.
- Cheese- Feta cheese is the best choice for this but be sure to get the cheese in a block and break the pieces off yourself. It’s not the same as the stuff that comes pre crumbled. Trust me, you’ll notice the difference.

Greek Tortellini Pasta Salad Ingredients

- Cheese Tortellini, cooked in salted pasta water
- Olive Oil
- Cherry Tomatoes, halved
- Red Onion, diced
- Cucumber, seeded and diced
- Bell Pepper, diced
- Kalamata Olives, potted and rough chopped
- Feta Cheese Block, crumbled
- Red Wine Vinegar
- Garlic, grated
- Fresh Lemon Juice
- Dijon Mustard
- Salt, Pepper, Oregano,
Instructions
First, in a large bowl, add the cooked tortellini and 2 tablespoons of olive oil. Toss the tortellini into the olive oil until it’s evenly combined.

Now, add the red onion, cherry, tomatoes, bell peppers, olives, and cucumber.

Next, season everything with salt, pepper, and oregano.

Then, add the cubed feta cheese.

Now, in a small bowl, whisk together the red wine vinegar, oregano, fresh garlic, Dijon, mustard, and a dash of lemon juice. Then slowly whisk in the olive oil.

Then, pour the dressing over the tortellini salad and toss everything together until it’s evenly combined.

Now, serve immediately or chill it in the fridge for a few hours first and enjoy!



Greek Tortellini Salad
Ingredients
- 9 Oz Cheese Tortellini, cooked in salted water and rinsed under cold water
- 2 Tbs Olive Oil
- ½ Cup Cherry Tomatoes, halved or quartered
- ¼ Cup Red Onion, diced small
- ½ Cup Bell Pepper, diced small
- ½ Cup Kalamata Olives, pitted and rough chopped
- ½ Cup Cucumbers, deseeded and diced small
- 16 Oz Feta Cheese, crumbled off the block
- Salt and Pepper to taste
- 1 Tbs Oregano
Greek Salad Dressing
- 4 Tbs Red Wine Vinegar
- 1 Tbs Oregano
- 3 Cloves Garlic, grated
- 1 teaspoon Dijon Mustard
- 1 teaspoon Fresh Lemon Juice
- Salt and Pepper to taste
- ½ Cup Olive Oil
Instructions
- In a large bowl, add the cooked tortellini and olive oil. Toss the tortellini into the olive oil until it’s evenly combined.
- Add the red onion, cherry, tomatoes, bell peppers, olives, and cucumber.
