This one pot cheesy taco rice is a delicious meal all in itself! With taco seasoned ground beef, rice and cheese this recipe will keep you full for hours. It’s really one of those stick to your ribs dinners that are perfect for busy weeknights because it’s so easy to make and only requires one pot. That means less prep work and less clean up for you. Win!
My family loves to add their own toppings to this rice like sour cream, salsa, shredded lettuce and whatever else they’re in the mood for that night. It kinda reminds me of a burrito bowl if all of the ingredients were mixed now that I think about it. I absolutely love simple crowd pleasing recipes like this one.this cheesy.
What toppings should I use?
I do like to add some shredded lettuce, diced tomatoes and sour cream, personally. Sliced red olives, guacamole and some diced jalapeños would be delicious, too.

- Ground Beef
- Taco Seasoning
- Canned Corn
- Canned Black Beans
- Salsa
- White Minute/ Instant Rice
- Beef Broth
- Cheddar Cheese
- Monterey Jack Cheese
How To Make It
1. First, brown the ground beef and make it according to the directions on the back of the taco seasoning packet. Stir in the beans, corn and half the cheese over medium high heat. Then stir in the beef broth and rice.
PRO TIP: Be sure to shred the cheese yourself and avoid the pre shredded stuff that comes in a bag. It will melt much better that way.

2. Sprinkle the top with the remaining cheese and place a lid on top over medium low heat for 5-7 minutes or until the rice is fully cooked. Let it cool slightly and serve and enjoy!

Do I Have To Use Ground Beef?
No, ground turkey or chicken would also work here, too.
What Toppings Can I Add?
Shredded lettuce, diced tomatoes and sour cream are all fantastic additions. Sliced red onions, olives, guacamole and diced jalapeños would all be wonderful, too.
What Should I Serve This With?
Serve this rice with a simple side salad or chips and salsa.
Storage
Let the rice cool completely and place it into a food safe air tight container. It will last in the refrigerator for up to three days.

One Pot Cheesy Taco Rice Recipe
Ingredients
- 1.5 Pounds Ground Beef
- 2 Oz Taco Seasoning Packet (2 packets)
- ½ Cup Mild Salsa
- 15 Oz Can Black Beans, rinsed and drained
- ½ Cup Corn, drained
- 2 Cups Beef Broth
- 2 Cups White Minute or Instant Rice
- 2 Cups Cheddar Cheese, hand shredded & divided
Instructions
- Make the ground beef according to the directions on the back of the taco seasoning packet. Use two packets instead of one for 1.5 lbs of beef for extra flavor!
- Stir in the beans, corn and half the cheese over medium high heat.
- Stir in the beef broth and rice.
- Sprinkle the top with the remaining cheese and place a lid on top over medium low heat for 5-7 minutes or until the rice is fully cooked. Let it cool slightly and serve and enjoy!
