This Dorito Crescent Roll Taco Bake is one of those easy weeknight dinners that feels like a special mid week treat. It comes together with simple ingredients and couldn’t be easier to make. It has all the taco flavors everyone loves but baked into a cheesy, crunchy casserole with a buttery crescent roll crust.

How To Make It

Preheat the oven to 350 degrees.
1. Spray a 9 x 13 inch baking dish with cooking spray. Unroll the crescent roll sheet and press it into the bottom of the baking dish. Bake the crescent roll crust for about 5 to 6 minutes, just to par bake it.
PRO TIP: Be sure not to skip this step. Par baking is the best way to keep the bottom from getting too soft once the taco filling is added.

2. While the crust is baking, cook the ground beef in a skillet over medium-high heat until browned. Drain the grease if needed. Add the taco seasoning and prepare the taco meat according to the directions on the seasoning packet. Stir the salsa and sour cream into the taco meat until everything is evenly combined.
PRO TIP: Be sure to drain the grease from the beef well. If there’s too much grease left in the pan, it can make the taco bake soggy.

3. Once the crescent roll crust is done par-baking, carefully spread a thin layer of refried beans over the top. Add the taco beef mixture over the refried beans and spread it out evenly. Sprinkle a thin layer of crushed Doritos over the beef mixture. Add the shredded cheddar cheese over the top.

4. Place it into the center rack of the oven for about 30 minutes, or until the cheese is melted, the edges are golden, and everything is heated through. Let it rest for about 5 minutes before slicing and serving.
PRO TIP- Let it rest for a few minutes to help everything set up so the slices come out cleaner when serving.

What Can I Serve This With?
This is great with a simple side salad, Mexican rice or corn Add guacamole, sour cream or chopped lettuce and tomatoes on top after baking.
Can This Be Made Ahead Of Time?
You can cook the taco meat ahead of time and keep it in the fridge until you’re ready to assemble. I’d wait to add the Doritos until right before baking so they keep some texture.
Storage
Let the casserole cool completely and place it into a food safe air tight container. It will last in the refrigerator for up to three days.
