Crockpot meals are perfect for those days when I want something homemade for dinner without having to spend a ton of time in the kitchen. This whole chicken is incredibly easy to put together and comes out tender, juicy and full of flavor.
I love adding carrots, celery and onion right to the bottom of the crockpot before adding the chicken. They cook in all those delicious juices while the chicken slow cooks, making this a super easy and comforting dinner the whole family can enjoy.

How To Make It

- Add the carrots, celery and onion to the bottom of the crockpot and spread them out into an even layer. Pat the chicken dry with paper towels and lightly coat the outside with olive oil. In a small bowl, stir together the salt, pepper, garlic powder, onion powder, paprika, poultry seasoning, thyme and rosemary. Rub the seasoning mixture all over the chicken until it is evenly coated. Place the seasoned chicken on top of the vegetables in the crockpot.

- Add the pats of butter evenly over the top of the chicken. Cover and cook on LOW for 7–8 hours, or until the chicken is cooked through and reaches an internal temperature of at least 165°F. Carefully remove the chicken from the crockpot and let it rest for about 10 minutes before carving. Serve with the cooked vegetables and some of the juices from the bottom of the crockpot, if desired.

- Pat The Chicken Dry – Removing as much moisture as possible helps the olive oil and seasoning mixture stick to the chicken.
- Skip The Extra Liquid – There’s no need to add chicken broth or water. The chicken and vegetables will release plenty of liquid while they cook.
- Don’t Keep Opening The Lid – Try to leave the crockpot covered while the chicken cooks so you don’t release all that heat.
- Brown The Skin – Crockpot chicken skin will be soft rather than crispy. For a more traditional roasted appearance, carefully transfer the cooked chicken to a baking sheet and broil it for a few minutes until the skin is browned.
- Check The Temperature – Use a meat thermometer in the thickest part of the chicken without touching the bone to make sure it has reached at least 165°F.

- Add Potatoes – Add baby potatoes or chunks of Yukon Gold potatoes to the bottom of the crockpot for an even heartier one-pot meal.
- Make It Lemony – Add lemon pepper seasoning or fresh lemon to give the chicken a brighter flavor.
- Switch Up The Herbs – Italian seasoning can be used in place of the rosemary and thyme.

Why isn’t my Crockpot Roasted Chicken crispy?
The crockpot traps moisture, so the skin will naturally be soft. If you’d like it browned, carefully transfer the cooked chicken to a baking sheet and place it under the broiler for a few minutes.
Storage & Reheating
Store leftover chicken and vegetables in an airtight container in the refrigerator for up to 3–4 days. For the best results, store the chicken with a little of the cooking liquid to help keep it moist.
Reheat individual portions in the microwave or gently warm them in the oven until heated through. Leftover chicken can also be removed from the bones and frozen in an airtight freezer-safe container for up to 3 months. Thaw it overnight in the refrigerator before reheating.
