Taco Bell Chicken Quesadillas are made with shredded chicken tossed a cheesy and slightly spicy sauce then served in between crispy tortillas.
Taco Bell Chicken Quesadillas

Taco Bell chicken quesadillas are one of my favorite things to order on their menu.

The chicken is seasoned perfectly and goes together so well with all of that gooey cheese. Just thinking about it makes me want to eat some.
We love to make these quesadillas for a quick lunch or dinner when we’re in the mood for them but don’t really feel like driving to the restaurant. This recipe contains pickled jalapenos but don't worry, its not too spicy for the kids.

There’s nothing like some fast comfort food made right at home. Pair this with some homemade Taco Bell Quesadilla Sauce and you’ve truly got a meal the whole family will love.

Taco Bell Chicken Quesadillas Variations
I like this chicken quesadilla recipe me just the way it is, but here are some ways to change it up if you’d like.

Just remember that this is a copycat recipe. So any changes will take it farther away from the Taco Bell version.
- Tortillas- Flour or corn would both be ok to use here
- Cooking- Baking these are an option, too. Just pop them in the oven at 400° for about 20 minutes. It’s a great idea to spray them with some cooking spray first, too.
- Chicken- You can use shredded rotisserie chicken or any kind of cooked and cubed chicken.

- Spice- The pickled jalapenos really do not add too much heat at all. Feel free to add more for a little more kick.
- Cheese- Choose any kind of cheese that you’d like. Just be sure to shred it yourself because it will melt much better that way.
- Dipping- Dip these in sour cream, salsa or this Copycat Taco Bell Quesadilla Sauce.

Taco Bell Chicken Quesadilla Ingredients

- Flour Tortillas
- Rotisserie Chicken, shredded
- Mayonnaise
- Diced Pickled Jalapeño’s (plus some juice from the jar)
- Cheddar Cheese, shredded
- Salt, Pepper, Garlic Powder, Cumin, Cayenne Pepper and Chili Powder
Instructions
First, in a large bowl, add the shredded chicken, mayonnaise, diced pickled jalapenos (plus some juice from the jar, and shredded cheddar cheese.

Then, season the chicken and stir everything together until it’s evenly combined.

Now, evenly distribute the chicken mixture onto the bottom of one tortilla. I like to add a little extra cheese on before I add the filling but that’s totally optional and up to you.

Next, place another tortilla on top of each one.

Then, in a large skillet, add a tiny amount of oil or cooking spray and toast the tortillas on both sides over medium high heat until golden brown.

Finally, transfer them to a cutting board, slice them into individual pieces and enjoy them with some Taco Bell Quesadilla Sauce or a mixture of sour cream and salsa.

- 6-8 Medium Flour Tortillas
- 1 Rotisserie Chicken, shredded
- 3 Tbs Pickled Jalapenos, diced (plus 1 tbs of the juice from the jar)
- 1 Cup Mayonnaise
- 1 Cup Cheddar Cheese, shredded
- Salt and Pepper to taste
- 1 teaspoon Cumin
- 1 teaspoon Chili Powder
- 1 teaspoon Cayenne Pepper
