The Taco Bell Enchirito is the perfect combination of taco seasoned ground beef, shredded cheddar cheese and refried beans wrapped in a flour tortilla baked in enchilada sauce.
From the recipe collection of Tara Ippolito

I used to love getting Enchirito from Taco Bell. It used to me one of my favorite things on their menu. Once they made the crazy decision to discontinue it in, 2013 I was not happy. One night, the craving for one hit me so hard that I had to try to make one for myself. It seemed pretty straight forward to me. Taco seasoned ground beef, refried beans, shredded cheese and a flour tortilla covered in enchilada sauce.
I can do that! My homemade version wound up being such a huge hit that it turned into an instant family favorite. Total recreation success! I love making these because not only does my family love them but they’re so easy to make, too.
