This easy to make tomato bruschetta is made with chopped tomatoes marinated in fresh garlic, Italian seasoning and just a few other simple ingredients served on toasted bread for the perfect crowd pleasing appetizer.

Tomato bruschetta is one of the most simple, delicious and refreshing appetizers.

This doesn’t require too many ingredients and it’s super easy to make, also.
This recipe is wonderful to serve all year round but I especially love it in the summer time when the weather is hot and Jersey tomatoes are nice and ripe.

Traditionally, these chopped and marinated tomatoes are served over a thin slice of toasted Italian bread.
Even though I love it like that, I do prefer to serve them on a bagel chip for summer parties and get togethers.

This way, guests can just take a little scoop here or there and don’t need to commit to a big piece of bread.
Either way, the tomatoes are busting with fresh flavors that everyone is sure to love.

This is one of my families favorite summer appetizers for parties, BBQ’s, trips to the beach or any get together.

Tomato bruschetta variations
I love this recipe as it is, but here are some ways to switch it up if you’d like to.

- Tomatoes- Roma tomatoes are freer for this recipe but ant kid of tomato will do. Even cherry or grape tomatoes would work here.
- Bread- I used bagel chips for this recipe because I love how crunchy they are and that they can be eaten in one bite. Toasted and sliced French or Italian bread is what bruschetta is typically eaten on. Garlic bread is also a great choice. So feel free to use whatever kind of bread or cracker that you’d like.
- Add Ins- chopped red onion and fresh mozzarella pearls are great additions to this bruschetta. I even like to add some rinsed white beans sometimes so feel free to get creative with flavors that you like.

Tomato bruschetta ingredients

- Tomatoes
- Chopped garlic
- Olive oil
- Balsamic vinegar
- Fresh basil, shredded
- Salt, pepper, Italian seasoning & garlic powder
- Sliced Italian bread or bagel chips
Instructions
First, clean the tomatoes and core them. Drain any extra juice and dice them into small pieces.

Now place them in a medium sized bowl and add the chopped garlic, oil, balsamic vinegar, seasonings and shredded basil.

Next, gently mix everything together until it’s evenly combined.

Now cover the tomatoes and place them into the refrigerator for about 30 minutes.

Finally, give everything one more big mix and serve them with sliced Italian bread or bagel chips. Enjoy!

- 5 Roma Tomatoes (or tomatoes of your choice)
- 4 cloves Fresh Garlic, chopped
- 3 tbs Olive Oil
- 1 tbs Balsamic Vinegar
- Salt and Pepper
- 1 tbs Italian Seasoning
- 1 teaspoon Garlic Powder
- 6-8 leaves Fresh Basil, shredded
- Bagel Chips or Sliced Italian Bread
