These stuffed sausage and peppers are such a delicious and easy to make meal that the whole family is sure to love.

This recipe is such a fun spin on the traditional Italian dinner. Especially, with all of that ooey gooey cheese stuffed inside the sausages.
We grew up eating sausage and pepper dinners all the time as kids. My Mother used to make it for us over a nice big bowl of spaghetti or on a fresh club roll. Shes even served this to us over some white rice on occasion.
It's a recipe that I've been making myself for as long as I can remember, too. However, I only started doing it this way a few years ago. I had seem this done on social media and knew immediately that I needed to give this version a try.

What a huge hit it was right off the bat! My whole family loved it so much that we wound up making it a part of our monthly dinner menu rotation.
Usually we made this recipe with sweet Italian sausage. That was it isnt too spicy for my kids to enjoy but you can absolutely make this using spicy sausage, too. Or even do a mix of sweet and spicy if you'd like.

Personally, I like a little heat but its great however you choose to make it. We've made it lots and lots of times and many different versions and everyones always very happy with any one of them.
This is a delicious, easy to make dinner thats perfect for a busy weeknight.

Stuffed Sausage And Peppers Variations
I like this recipe for sausage and peppers made just the way it is, but here are some ways to change it up if you'd like to.

- Sausage- Use hot or sweet Italian Sausage. They both work wonderfully here.

- Vegetables- Try to use different color bell peppers to add a little color the dish. Sliced mushrooms are also a great addition, too,

Stuffed sausage and peppers ingredients

- Italian Sausage (sweet or hot)
- Mozzarella Cheese Sticks
- Onion, sliced thin
- Bell Peppers, sliced thin
- Garlic, minced
- Marinara Sauce
- Provolone Cheese
- Olive Oil
- Salt & Pepper to taste
Instructions
Preheat the oven to 400 degrees
First, add some tomato sauce to the bottom of a 9x13" inch baking dish.

Now, saute the sliced peppers and onion in a little olive oil and season with salt and pepper.

Then, once the vegetables are soft, add the minced garlic and continue to cook them for another 1-2 minutes.

Then, add the sauted peppers and onions to the baking dish and spread them out evenly on top of the sauce.

Next, slice the middle of the sausage long ways but not completely through and add either a whole mozzarella cheese stick or half (depending on how big the sausage you're using is) to the center of the sausage.

Then, wrap the sausage closed around the mozzarella stick and place them on top of the bed of sausage and peppers seam side up.

Next, drizzle the top with a little more sauce and cover the sausages with provolone cheese.

Now, cover the baking dish with foil and bake at 400° for 45 minutes or until the sausage is cooked all the way through.

Finally, serve hot over pasta, rice, in a roll or solo and enjoy.


Stuffed Sausage and Peppers
Ingredients
- 1.5 pounds Italian Sausage, hot or sweet
- 8 Mozzarella String Cheese
- 2. ½ cups Marinara Sauce
- 1 small Green Bell Pepper, sliced thin
- 1 small Orange Bell Pepper, sliced thin
- 1 large Onion, sliced thin
- 2 cloves Garlic, minced
- 6 slices Provolone Cheese
- 2 tbs Olive Oil
- Salt and Pepper to taste
Instructions
- Preheat the oven to 400 degrees
- Line a 9x 13" inch baking dish with about 2 cups of marinara sauce
- Saute the sliced peppers and onion in a little olive oil and season with salt and pepper.
- Once the vegetables are soft, add the minced garlic and continue to cook them for another 1-2 minutes.
- Add the sauted peppers and onions to the baking dish and spread them out evenly on top of the sauce.
- Slice the middle of the sausage long ways but not completely through and add either a whole mozzarella cheese stick or half (depending on how big the sausage you're using is) to the center of the sausage.
- Wrap the sausage closed around the mozzarella stick and place them on top of the bed of sausage and peppers seam side up.
- Drizzle the top with the rest of the sauce and cover the sausages with provolone cheese.
- Tightly cover the baking dish with foil and bake at 400° for 45 minutes or until the sausage is cooked all the way through.
- Serve hot over pasta, rice, in a roll or solo and enjoy.
