Breakfast Burritos With Sausage Gravy Variations
I like this breakfast burrito recipe made just the way it is, but here are some ways to change it up if you’d like to.

- Cheese- Any kind of cheese here will work. Just be sure to shred the cheese yourself because it will melt much better that way.
- Bacon- instead of using bacon, you can either omit it completely or sub for even more sausage. Use the precooked frozen bacon for extra convenience
- Add On’s- Add extra vegetables, breakfast potatoes or whatever else you’d like to the burritos.

Breakfast Burritos With Sausage Gravy Ingredients

- Small Flour Tortillas
- Eggs, beaten
- Butter
- Shredded Cheddar Cheese
- Cooked Bacon
- Breakfast Sausage
- Flour
- Milk
- Salt, Pepper and Garlic Powder
- Fresh Parsley, for garnish (optional)
Instructions
Preheat the oven to 350°
First, in a medium size skillet, melt the butter over medium high heat, and add the beaten eggs.

Now, season the eggs with a little salt and pepper and scramble them adding ¼ of a cup of cheese towards the end. The cheese will help bind the eggs together in the burrito.

Then, heat the tortillas for 10 seconds in the microwave (this will make them easier to roll).

Next, divide the shredded cheddar cheese, eggs, and bacon into the center of each tortilla.

Now, roll the tortillas and place the burritos seam side down in a 9 x 13“ baking dish that has been sprayed with a little cooking spray.

Then, in a large skillet, brown, the sausage over medium high heat until it is cooked completely through.

Next, stir in the flour and let the sausage and flour cook together for two minutes stirring frequently.

Now, slowly pour in the milk and continue stirring.

Then, season the gravy with salt, pepper, and garlic powder. Continue stirring over medium heat until the gravy becomes thick. This should take about 3-5 minutes.

Next, pour the sausage gravy evenly on top of the burritos.

Now, place the burritos in the center rack of the oven for 20 minutes.

Finally, let the burritos cool, slightly garnish with parsley (optional), serve warm, and enjoy!
