If you’ve ever had a Beef Meximelt before from Taco Bell consider yourself very lucky. They're currently discontinued with no sign of returning. There’s nothing worse then when a restaurant pulls and item that you love from their menu.
Luckily, making them at home is fast, easy and delicious! I put my own spin on it, of course. But this this as close to the real deal as you can get. It's always a crowd pleaser and perfect for a busy weekday dinner.

- Taco Seasoning - Packs in all that classic Tex Mex falvor.
- Ground Beef- The hearty, savory base and meaty filling.
- Cheddar Cheese- Brings a bold, sharp flavor.
- Monetary Jack Cheese-Melts smooth and gives a creamy texture.
- Salsa- Adds moisture, acidity and hint of acidity.
- Tortillas- The soft, neutral base that holds everything together.
How To Make It
Heres how to make this delicious copycat recipe. You can find the full ingredients list along with instructions on the recipe card below.
Cook the ground beef according to the directions on the taco seasoning packet. Keep it warm in the skillet. Place the 4 large tortillas down and add both of the cheeses onto each of the tortillas evenly. Evenly distribute the salsa on top of the cheese and do the same with the ground beef.
PRO TIP: Be sure to shred the cheese yourself and avoid the pre shredded stuff that comes in a bag. It will melt much better that way.

Roll the tortilla up like a burrito and place them seam side down onto skillet over medium high heat that's been sprayed with cooking spray. Brown the tortillas for 2-3 minutes on all sides. Slice them diagonally, serve warm and enjoy!

What Should I Serve Them With?
These go great with my homemade Taco Bell Copycat Quesadilla Sauce. They're also wonderful with some sour cream, guacamole and a little extra salsa on the side, too.
Storage
Let them cool and place them into a food safe, air tight container. They will last in the fridge for up to three days.

Ingredients
- 1 Pound Ground Beef
- 1 Oz Packet Taco seasoning
- ½ Cup Salsa
- 1 Cup Cheddar Cheese, hand shredded
- 1 Cup Monetary Jack Cheese, hand shredded
- 4 Large Flour Tortillas
Instructions
- Cook the ground beef according to the directions on the taco seasoning packet.

I put Pico d with cilantro instead of salsa. Then it really taste like taco bell meximelt and use microwave to heat it.
