How To Make It
Here’s everything you need to make this delicious dinner. You can find the ingredients along with measurements and instructions on the recipe card below.
- Lightly spray the inside of a large crockpot with cooking spray. Add the baby potatoes, carrots and green beans to the bottom of the crockpot. Season the vegetables with salt, pepper and garlic powder, then toss everything together until evenly combined.

- In a large bowl, add the ground beef, seasoned breadcrumbs, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, garlic powder and onion powder. Gently mix everything together until just combined. Be careful not to overmix the meat. Form the mixture into a loaf and place it directly on top of the potatoes and vegetables.Cover and cook on LOW for about 7–8 hours, or until the center of the meatloaf reaches an internal temperature of 160°F.

- When the meatloaf is almost finished cooking, stir the ketchup and brown sugar together in a small bowl. Spread the glaze evenly over the top of the meatloaf. Cover and continue cooking for another 30 minutes. Let it rest for about 10 minutes before slicing. Garnish with fresh parsley and serve warm with the potatoes, carrots and green beans.

Pro Tips
- Don’t over mix the meatloaf. Mix the ingredients just until everything comes together. Overworking the ground beef can make the meatloaf tough and dense.
- Try to shape the meatloaf so that it sits securely on top of the vegetables instead of being buried underneath them.
- Keep the baby potatoes relatively small. If yours are larger, cut them in half so they cook through at roughly the same rate as the carrots.
- Slow cookers can vary quite a bit. Start checking the meatloaf toward the end of the cooking time and use a meat thermometer to confirm it has reached 160°F.
- Let the meatloaf rest for about 10 minutes before slicing. This will help it hold together and keep the juices inside.
- If there is a lot of liquid in the crockpot when everything is finished, use a slotted spoon to serve the vegetables.
Variations
- Feel free to change the vegetables based on what you have or what your family likes. Yukon Gold or red potatoes can replace the baby potatoes as long as they’re cut into smaller pieces.
- You can also swap the green beans for another sturdy vegetable. Just keep in mind that softer vegetables may become very tender after several hours in the slow cooker.
- For a slightly different meatloaf flavor, add a little extra Worcestershire sauce or your favorite meatloaf seasoning blend. You can also make the glaze sweeter or tangier by adjusting the brown sugar to your preference.
What To Serve With It
One of the best things about this recipe is that you really don’t need to make anything else. You’ve already got your meat, potatoes and vegetables cooking together in the crockpot.
If you want something extra, serve it with warm dinner rolls, garlic bread or a simple side salad. A little extra ketchup or meatloaf glaze on the side is great, too.
Storage & Reheating
Store any leftover meatloaf, potatoes and vegetables in an airtight container in the refrigerator for up to 3-4 days.
To reheat, microwave individual portions until warmed through, or place the leftovers in a covered baking dish and warm at 350°F until heated through. Add a little extra ketchup or glaze to the meatloaf before reheating if you'd like to keep it nice and moist.
