Crockpot Golden Beef and Noodles is one of those cozy dinners that tastes like you spent all day in the kitchen even though the slow cooker does almost all of the work for you. These are my favorite kind of recipes.
Stew meat cooks low and slow in a creamy combination of golden mushroom soup, beef broth, au jus seasoning and Worcestershire sauce until it’s fall apart tender. Cream cheese, sour cream and egg noodles turn everything into an extra rich, comforting meal the whole family will love.

What Is Golden Mushroom Soup?
Golden mushroom soup is different from traditional cream of mushroom soup. It has a darker, more savory, beefy mushroom flavor and isn’t quite as creamy. Using both soups gives this recipe a great balance of richness and depth.

- Stew Meat – Cut into bite-sized pieces if necessary.
- Salt, Pepper and Garlic Powder – For seasoning the beef.
- Golden Mushroom Soup – Gives the sauce its deeper, richer flavor and that “golden” gravy base.
- Beef Broth – Thins the soups and creates the gravy.
- Dry Au Jus Seasoning – Adds concentrated beefy, savory flavor.
- Garlic – For another layer of savory flavor.
- Worcestershire Sauce – Adds depth and a little tanginess to the gravy.
- Butter – Makes the sauce richer.
- Cream Cheese – Adds creaminess and helps create a smooth sauce.

How to Make Them
- Lightly grease the inside of your slow cooker with cooking spray. Season the stew meat on all sides with salt, pepper and garlic powder. Add it to the Crockpot. Add golden mushroom soup, beef broth, au jus seasoning, minced garlic, Worcestershire sauce, butter and cream cheese. Cover and cook on LOW for 7–8 hours, or until the beef is very tender.

- Once the beef is tender, gently stir or whisk the sauce around the beef until the cream cheese and other ingredients are completely incorporated and the gravy is smooth and creamy. Stir in the sour cream until completely combined. Fold in the cooked egg noodles and gently stir until they’re coated in the creamy golden gravy. Cover and let everything sit together in the Crockpot for about 5 minutes before serving. Garnish with parsley (optional) and enjoy!

Pro Tips
- Cook it low and slow. Stew meat really benefits from the full 7–8 hours on LOW. It gives the connective tissue time to break down and become tender.
- Don’t add the noodles at the beginning. Cook them separately and add them at the end so they don’t turn mushy.
- Bring the sour cream to room temperature. Cold sour cream is more likely to separate when it’s stirred into a hot sauce.
- Go easy on the added salt at first. The condensed soups and au jus seasoning already contain plenty of salt. You can always taste and adjust at the end.
- Want more gravy? Add an extra splash of beef broth if the sauce becomes thicker than you’d like.
- Don’t vigorously whisk the beef. By the end of cooking it should be very tender, so gently stir the sauce around it to keep some nice pieces of beef intact.
Variations
- Add mushrooms: Sliced baby bella or white mushrooms would be delicious added to the Crockpot.
- Add onion: Add a small diced yellow onion at the beginning for even more savory flavor.
- Make it extra creamy: Use a little additional sour cream at the end.
- Skip the noodles: Serve the golden beef and gravy over mashed potatoes or rice instead.
What to Serve With It
This is definitely a hearty meal on its own, so I like keeping the sides simple. Green beans, roasted broccoli, peas or a simple side salad would all work.
And if you’re making comfort food, you can’t go wrong with some warm bread or dinner rolls for soaking up that creamy golden mushroom gravy.
Should I Brown The Meat First?
No. You can put the seasoned stew meat directly into the Crockpot. Browning would add another layer of flavor, but it’s absolutely not necessary for this easy slow-cooker recipe.
Storage & Reheating
Store leftovers in an airtight container in the refrigerator for 3–4 days.
Reheat individual portions in the microwave or warm them gently on the stovetop. The noodles will continue absorbing the sauce as they sit, so add a splash of beef broth or milk while reheating if you want to loosen the gravy.
