This is a new recipe for me that I kept seeing online, and I finally had to try it. Swamp potatoes are one of those simple, old school crockpot dishes that I wish I had tried sooner. Even if you’ve never made them before, like me, you can’t mess these up. Everything cooks together low and slow until it turns buttery, savory, and completely delicious.

I loved this recipe because it’s incredibly easy and delivers big comfort food flavor with very little effort. The smoky sausage, tender potatoes, and green beans soak up all that buttery onion seasoning, making it perfect for busy days, family dinners, or potlucks. It’s the kind of dish that disappears fast and has everyone asking for the recipe.

Why Are They Called Swamp Potatoes?

Apparently, the name comes from how the dish looks when it’s done. Potatoes, green beans, sausage, butter, and seasoning all cook down into a soft, saucy mixture that looks like everything is “swimming” together in a savory swamp. It’s a playful Southern nickname for a rustic, comfort food side dish.

  • Baby Potatoes– The hearty base of the dish; they soak up all the butter and seasoning while becoming fork tender.
  • Andouille Sausage– Adds smoky, spicy depth and rich fat that flavors the entire crockpot.
  • Onion – Brings sweetness and savory balance as it softens into the sauce.
  • Fresh Cut Green Beans– Adds texture, saltiness, and that classic Southern vegetable note.
  • Onion Soup Mix – The main seasoning powerhouse! Adds salt, and deep onion flavor.
  • Butter– Creates richness and moisture while helping everything meld together.
  • Fresh Garlic- The garlic will add a fresh, layer of earthy flavor.
  • Salt – Enhances all the flavors and balances the potatoes.
  • Black Pepper – Adds gentle heat and sharpness.
  • Garlic Powder – Brings savory depth without overpowering the dish.
  • Onion Powder – Reinforces the onion flavor and boosts th

How To Make It

Here’s how to make these delicious swamp potatoes. You can find the full ingredients list along with instructions on the recipe card below.

First, spray the inside of your crockpot generously with nonstick spray. Add the quartered baby potatoes and season them with salt, pepper, garlic powder, and onion powder. Stir until the potatoes are evenly coated in the seasoning. Add the diced onion, fresh garlic and sliced andouille sausage on top. Add the drained green beans and spreading them evenly.

PRO TIP: Cut the potatoes evenly so they all cook evenly.

Now, sprinkle the onion soup mix over everything and place the stick of butter on top. Cover and cook on HIGH for 5 hours, until the potatoes are very tender. Gently stir before serving to coat everything in the buttery sauce and enjoy!

NOTE: Do not add any extra liquid. The butter will create a nice sauce.

PRO TIP: Serve immediately. This is best when it’s hot and bubbly.

Why Are My Potatoes A Little Mushy?

Swamp potatoes are meant to be soft and saucy, not firm or crispy. It’s a totally normal texture fit this recipe.

Can I Use Smoked Sausage Instead Of Andouille?

Absolutely. Andouille is smokier and spicier, but any smoked sausage works.

Do I Have To Use Canned Green Beans?

Canned green beans are traditional for this recipe. Fresh green beans can be used but they’ll stay firmer and change the texture.

Can I Cook This On Low Instead Of High?

Yes, this can be cooked on low for 7-8 hours.

Storage

Let the swamp potatoes cool completely and place them into an air tight storage container. They will last in the refrigerator for up to three days.

Ingredients
  

  • 1.5 Pounds Baby Yellow Potatoes, cleaned and cut into quarters
  • 1 Small Onion, diced
  • 2 Cloves Garlic, miced
  • 13.5 Oz Andouille Sausage- sliced into ¼" pieces
  • 2 (14.5) Oz Cans Fresh Cut Green Beans, drained
  • Salt and Pepper to taste
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 Oz Paket Lipton Onion Soup Mix
  • 1 Stick Butter

Instructions
