Tips for softening the cream cheese
Lots of recipes call for softened cream cheese and there are a few ways that you can do it.

First, just take it out of the fridge and toss it onto the counter for about 30 minutes. That’s all there is to it! The cream cheese will be perfect after that time.
Second, you can add it (still sealed) to a bowl of warm water. This method will take even faster. About 10-15 minutes.

And last but not least, you can always use the trusty microwave. Take the cream cheese out of the package and place it onto a plate. Microwave it for 30 seconds – 1 minute and you’re done!
How should I serve these easy baked chicken fajitas?
I like to slice the chicken up right in the baking dish and serve these in flour tortillas.
If that seems like too much work, you can always cut the chicken into strips before baking it to make the process a little easier.

Just be aware that it will take less time to cook if the chicken is in smaller pieces.
If you’d like to skip the tortillas, that’s fine, too. This recipe would be great served over white rice or alone.
Do I really have to shred the cheese myself?
Yes, absolutely!
This is the one thing that I’d really urge you not to take a shortcut on.
Pre-shredded bagged cheese has chemicals in it like cellulose.

This keeps the cheese from clumping but it also prevents it from melting properly.
Shred the cheese off the block and these fajitas will be much creamier.
How can I spice these easy baked chicken fajitas up?
Adding some heat to this dish is super easy. Here are a few suggestions to consider.
First, try using hot salsa instead of mild. That will add a lot of nice flavor.

Second, you can use a hot and spicy taco seasoning packet instead of a fajita seasoning packet.
Also consider adding some diced jalapeños or green chilis to the top of the dish either before or after baking.

You can always swap out the cheese for a spicier option like pepper jack, too.
By following those suggestions, you’ll be sure to add some spice and heat to these baked fajitas for sure.

Easy baked chicken fajitas ingredients

- Chicken breast (sliced thin)
- Salsa
- Softened cream cheese
- fajita seasoning packet
- Shredded white cheddar cheese
- Shredded Monterey Jack cheese

- Sliced white or yellow onion
- Tortillas (optional)

Instructions
First, in a medium size bowl, add the softened cream cheese, salsa and fajita seasoning packet. Mix well to combine.

Then add the chicken to a 9 x 13” baking dish in a single layer ( a slight overlap is fine) and lightly season with salt and pepper.

Now spread the cream cheese mixture evenly over the top of the chicken.

Next, sprinkle half of the cheese on top and add the sliced peppers and onions. Lightly season with salt and pepper.

Then top with the rest of the cheese.

After that, bake it in the oven until the cheese is melted and the chicken is cooked all the way through.

Finally, let it cool slightly, garnish with parsley ( optional) and serve either alone, over white rice or in a flour tortilla and enjoy!

- 9" x 13" baking dish
Ingredients
- 1-1.5 lbs chicken breast (thinly slicedd)
- 1 1 oz fajita sasoning packet (mild)
- 1 8 oz package cream cheese, room temperature
- ⅓ c salsa (mild)
- 1 c cheddar cheese, shredded (divided)
- 1 c monterey jack cheese, shredded (divided)
- 1 large sliced red bell pepper
- 1 large sliced yellow bell pepper
- 1 large sliced yellow or white onion
- salt and pepper to taste
- tortillas (optional)
- parsley for garnish (optional)
Instructions
- First, in a medium size bowl, add the softened cream cheese, salsa and fajita seasoning packet. Mix well to combine.

Hey Tara, I have found that you're exactly right about how much better cheese melts when you shred it yourself! What are your thoughts about shredding the entire block of cheese and storing it in a baggie so I don't have to wash my shredder every time I need some shredded cheese?

Hi Kim!! You absolutely can just be careful it may mold faster. I know cheese is freezable though! Also, if you spray your cheese grater with cooking spray the cheese will fall right off. It makes clean up so much easier.
