- Preheat the oven to 350. In a large skillet, heat the olive oil over medium high heat and sauté the onion and garlic into soft. Add the ground beef and seasoning it with salt and pepper, garlic powder and Italian seasoning. Brown the ground beef, breaking it up into small pieces as it cooks. Drain the fat if needed. Add the crushed tomatoes and season it with salt, pepper, garlic powder and Italian seasoning. Stir them into the ground beef and let it simmer for 5 minutes.

- Turn off the heat, add the tortellini and stir it into to sauce until it’s evenly coated. In a greased baking dish, add half of the tortellini and sauce mixture and smooth it out so that it is flat even. In a separate bowl mixed together the ricotta cheese, shredded mozzarella cheese, Parmesan, Italian seasoning, salt, pepper, and garlic powder. Dollop the ricotta mixture on top of the tortellini. Using the back of a spoon, smooth it out into an even layer over the tortellini.

- Add the rest of the tortellini on top of the ricotta mixture and smooth it out so that it’s flat and even. Cover the top with the shredded mozzarella cheese. Place in the center rack of the oven until the cheese is melted, and the sides are hot and bubbly. Let it cool slightly garnish with parsley (optional). Serve warm and enjoy!
