- Heat the olive oil and butter in a large skillet over medium heat. Once the butter has melted, add the diced onion and chopped garlic and sauté until the onion begins to soften. Reduce the heat to low and add the sliced cabbage. Season with salt and pepper. Slowly sauté the cabbage for about 25 minutes, stirring occasionally, until it is very soft and wilted down.

- Meanwhile, boil the egg noodles according to the package directions. Before draining them, reserve some of the pasta water. Add the miso paste to a small bowl along with some of the reserved pasta water and whisk until the miso is completely dissolved. Add the cooked egg noodles to the skillet with the cabbage and pour the miso mixture over everything.

- Add the remaining butter and a generous amount of freshly grated Parmesan cheese. Season with additional salt, pepper, and garlic powder to taste, then toss everything together until the noodles and cabbage are evenly coated. Serve warm with additional Parmesan cheese on top, if desired.

Pro Tips
- Cook the cabbage low and slow. Give it the full 25 minutes so it becomes very soft, sweet, and tender.
- Save that pasta water. Scoop it out before draining the noodles because you’ll need it to dissolve the miso.
- Don’t add miso directly to the hot pan. Mixing it with the warm pasta water first helps it dissolve evenly and distribute throughout the noodles.
- Grate your own Parmesan. Freshly grated Parmesan melts much more smoothly into the noodles.
- Taste before adding more salt. Miso and Parmesan are both naturally salty, so reseason at the very end.
Variations
- Add red pepper flakes for a little heat.
- Stir in crispy bacon or pancetta if you’d like to add meat.
- Add shredded rotisserie chicken for extra protein.
- Swap the egg noodles for another short or wide pasta if that’s what you have.
- Add extra miso for an even deeper umami flavor.
Can This Be Make Ahead Of Time?
You can, but they’re best served right after making them. If making them ahead, reserve a little extra pasta water to help loosen the noodles when reheating.
Storage & Reheating
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
Reheat the noodles gently in a skillet over medium-low heat with a splash of water or broth and a little extra butter to loosen everything back up.
I don’t recommend freezing this recipe because the cabbage and egg noodles can become too soft once thawed and reheated.
