How To Make It
Here’s how to make this amazing recipe you can find the full ingredients list along with instructions on the recipe card below
- Preheat the oven to 350°F. Add the boneless, skinless chicken thighs to a large bowl and season them with salt, pepper, garlic powder, onion powder, rosemary, thyme, and paprika. Drizzle the chicken with olive oil and toss everything together until the chicken is completely coated in the seasonings. Transfer the seasoned chicken thighs to a 9 x 13" baking dish, arranging them in a single layer.

- Peel the carrots, cut them into approximately 2" chunks, and nestle them in between the chicken thighs. Sprinkle the diced onion evenly over the top of the chicken and vegetables. Pour the chicken broth into the baking dish, cover tightly with aluminum foil, and bake for approximately 1 hour and 30 minutes.

- Carefully remove the baking dish from the oven and take off the foil, keeping your hands and face away from the hot steam. Using a heat-safe turkey baster, carefully transfer the cooking liquid from the baking dish into a heat-safe bowl or measuring cup. Leave the chicken and vegetables in the baking dish. In a separate small bowl, whisk the cornstarch and cold water together until completely smooth.

- Whisk the cornstarch mixture into the hot cooking liquid until well combined. Pour the gravy back over the chicken thighs and vegetables, coating everything evenly. Increase the oven temperature to 450°F and return the baking dish to the oven, uncovered, for approximately 20 minutes, until the gravy is bubbling and the chicken has a little color on top. Garnish with freshly chopped parsley (optional) and serve warm.

Pro Tips
- Use a Turkey Baster – This is one of the easiest ways to remove the hot cooking liquid without having to lift and pour the entire baking dish. A heat-safe ladle also works.
- Cut the Carrots Into Larger Pieces – Since the chicken cooks for a while, larger carrot chunks will hold up better than thin slices.
- Make a Smooth Slurry – Always mix the cornstarch with cold water before adding it to the hot liquid to prevent lumps.
- Check the Gravy – The gravy should coat the back of a spoon. If it's still too thin, simmer it a little longer before pouring it over the chicken.
- Check the Chicken – Chicken thighs need to reach at least 165°F internally, although thighs can become especially tender at higher temperatures.
Variations
- Add Potatoes – Nestle some small baby potatoes between the chicken thighs for an even heartier one-dish meal.
- Use Bone-In Chicken Thighs – Bone-in thighs work well here, although cooking times may vary.
- Add Mushrooms – Sliced mushrooms would be delicious with the onions and carrots.
- Make It Creamy – Stir a little heavy cream into the gravy for a richer, creamier version.
- Add More Vegetables – Celery or parsnips would be great additions.
What To Serve With It
These oven baked smothered chicken thighs are especially delicious with something that can soak up all that homemade gravy like Mashed Potatoes, Rice, Egg Noodles or Bread.
Can I Use Chicken Breasts?
Yes, but chicken breasts are leaner and can dry out during a long baking time. I recommend sticking with thighs for this recipe or adjusting the cooking time if using breasts.
Can This Be Made Ahead Of Time?
Yes! You can prepare the entire dish ahead of time and reheat it when you're ready to serve. The chicken stays tender when stored with the gravy.
Storage & Reheating
Store leftover chicken, vegetables, and gravy together in an airtight container in the refrigerator for up to 3–4 days.
To Reheat, place everything in a baking dish, cover with foil, and warm in a 325°F oven until heated through. You can also microwave individual portions. Add a splash of chicken broth if the gravy has thickened too much.
To Freeze, allow the chicken and gravy to cool completely before transferring them to a freezer-safe container. Freeze for up to 3 months for best quality. Thaw overnight in the refrigerator before reheating.
