This beef queso dip is only four ingredients and on the table in less then 20 minutes.

I’ve heard this dip called a lot of different names before like Taco Dip and Rotel Dip to name a couple. But since I swapped out the can of Rotel for salsa, I’m perfectly comfortable calling it Beef Queso. After all that’s really all it is- just beef and cheese.

I say “just” beef and cheese but I don’t mean that as a negative. I mean that as an absolute compliment.

Seasoned beef melted together with Velveeta cheese and little salsa is addicting. There’s no way you’re only having a little taste of this dip. It’s all or nothing.

I’m a huge fan of Velveeta. No cheese melts better and keeps that perfect consistency like Velveeta does. It’s great on its own with nothing added to it. The beef and salsa just take it to the next level.

It’s super easy to make, too.

Here’s What You’ll Need:

  • Ground Beef
  • Taco Seasoning Packet
  • Velveeta cheese
  • Tortilla chips

How To Do It:

First, season the beef

The first thing to to is season the beef as directed on the taco seasoning packet

It will look like that when it’s done

Add the Velveeta next

Next, add the cubed Velveeta Cheese to the seasoned beef.

Melt it together

Stir the Velveeta cheese into the beef on medium low heat.

That’s perfect.

It will look like this when it’s combined

Time to add the salsa.

Lastly, add the salsa to the beef and cheese and stir it together.

Stir it in

Continue stirring until then beef, cheese and salsa are well blended together.

It’s finished.

Congratulations! You’re all done making this super easy beef queso dip. See, there was nothing to that at all.

If you want to transfer some to a little bowl and add some sour cream to the top like I do, it makes for a nice presentation.

Truth is, It doest really matter how you serve this. People are going to eat it regardless because it tastes amazing.

Equipment

  • Skillet

Ingredients

  • 1 Pound Ground Beef
  • 1 Packet Taco Seasoning
  • 8 Oz Cubed Velveeta Cheese
  • 1 Can Rotel or 1/2 jar of salsa

Instructions

  • Cook the beef according to the taco seasoning packet
  • Add the Velveeta cheese and stir in
  • Cook over medium low heat until the cheese is melted.
  • Add either the salsa or rotel
  • Stir in and continue cooking for about 5 minutes.
  • Serve hot and witch chips

Notes

You can make this with either a can of Rotel or salsa. I’ve done it both ways and to me, they both taste pretty similar. I like to serve this in a bowl with some sour cream. It’s so delicious and a hit every time.
