I put this meal together in no time and my family absolutely loved it. So did I!
I’m a huge fan of anything that’s made with taco seasoned ground beef and cheese in general if I’m being honest.

And this tasted just like one big taco. Right up my alley for sure.

What can I serve this Easy Taco Lasagna with?
The great thing about this dinner is that it’s a meal all on it’s own.
It really doesn’t need supporting side dishes if you’d like to serve this alone.

In case you do want something to serve along side this easy taco lasagna, some chips with salsa or guacamole would be great.
I have a nice recipe for ranch butter corn that would go perfectly with this.
A nice big house salad goes so well with everything, too.
Can I use something besides ground beef?
Absolutely! If ground beef isn’t you’re thing feel free to use ground turkey or even chicken.

I bet even shredded chicken would be delicious!
What cheese can I use?
I used a combination of shredded cheddar and Monterey Jack for this recipe.

If you’d like to stick to one only or use your own blend of cheddar, Monterey Jack, mozzarella or pepper Jack those would all be great choices.
Do I really have to shred the cheese myself?
Yes, absolutely!
This is the one thing that I’d really urge you not to take a shortcut on.

Pres-shredded bagged cheese has chemicals in it like cellulose.
This keeps the cheese from clumping but it also prevents it from melting properly.

Shred the cheese off the block. The lasagna will be much creamier.
Can I substitute the beans?
Yes, you absolutely can. I used pinto beans for this recipe.

If that’s not your thing, black beans would be great, too.
What toppings can I use?
Toppings for this easy lasagna are the best part!
There are so many delicious things you can add. Here are a few suggestions:

- Shredded lettuce
- Sour cream
- Diced tomatoes
- Guacamole
- Salsa
- Sliced black olives
- Diced jalapeños
Can I make this spicy?
Yes, you can absolutely make this spicy!
First, you can choose a spicy flavor taco packet. That will help for sure.

Pepper Jack cheese instead of the cheddar blend will spice things up, too.
If you choose to add some salsa as I suggest in the recipe variations, grab a jar of hot salsa.

Feel free to sprinkle some green chilies in-between those layers, also.
Try those few things and you’ll spice this dish up for sure.
Recipe variations
Although I love this recipe as is there are some things you can do to add to it.
First thing I’d suggest is adding a layer of either salsa or enchilada sauce after the meat.

That would be an absolute delicious addition.
I like adding sour cream as a topping after but it would certainly work if you threw a fell dollops in between the later
You could even trade the soft tortillas for layers of tortilla chips.
And add some diced jalapeños if you’d like it a little spicier.
Should I use corn or flour tortillas?
For this recipe, I prefer flour but it’s really up to you.

Corn tortillas would be a perfectly fine swap out.

Easy Taco Lasagna Ingredients

- Flour tortillas
- Ground beef
- Taco seasoning packets
- Kidney beans, rinsed & drained
- Cheddar cheese, shredded
- Monterey Jack cheese, shredded
- Any toppings you’d like for example- sour cream, salsa or guacamole.
Instructions:
First, make the ground beef according to the directions on the back of the taco seasoning packet.

I prefer using 2 packets instead of one for a ton of added flavor but that’s up to you if you’d like to do that or not.

Now spray a 9” x 13” baking dish with cooking spray and put down a single layer of tortillas.

Remember you can rip them in half to cover space on the sides.
Next add half of the seasoned ground beef and spread it evenly over the tortillas.

Then add a single layer of the beans.

And top that with the shredded cheese blend.

After that, do another layer of tortillas, seasoned beef, beans and cheese.

Finish the top and final layer with tortillas and the rest of the shredded cheese.

Bake at 375° for 20 minutes or until the cheese is melted.

Finally let it cool slightly before slicing and serving. Add whatever toppings you’d like and enjoy!
