Dinner doesn’t get any easier then this 4 ingredient pesto chicken. I absolutely love putting meals like this together. There’s nothing to it and dish looks so pretty and impressive when it’s served. This is a great no fuss weekday dinner to make in a pinch, too.
There is so much flavor in the chicken from the pesto that it tastes like you spend all day making it. That couldn't be farther from the truth! This is one of the most simple recipes that I have to share and its ready in just 30 minutes. The melted mozzarella cheese and stewed tomatoes really just set this recipe up to be an absolute winner.

How To Make It

Preheat the oven to 375°
First, place the chicken down onto a baking sheet & season it on both sides with salt, pepper and garlic powder (optional). Spread the pesto on both sides of the chicken. Add the fresh mozzarella on top of the chicken and top with tomato slices.
PRO TIP: I like to pat the sliced tomato onto a towel to remove any moisture and add a little salt and pepper for flavor.

Place it into the center rack of the oven for about 30 minutes or until the cheese is melted and the chicken is fully cooked. Serve warm and enjoy!

What Should I Serve This With?
This chicken dinner goes great with rice, pasta or roasted potatoes. It would also be delicious with Homemade Italian Garlic Bread.
Can Another Cheese Be Used?
Yes, if you’d rather try another kind of cheese parmesan, Swiss, Gruyère, or Asiago would be great.
Storage
Let the chicken cool completely and place it into a food safe, air tight container. It will last in the refrigerator for up to three days.

Equipment
- 9" x 13" baking dish
Ingredients
- 1 Pound Chicken Breast, sliced thin
- Salt & Pepper to taste (optional)
- 1 teaspoon Garlic Powder (optional)
- ½ Cup Pesto
- 1 Large Beef Steak Tomato, sliced thin
- 8-10 Oz Fresh Mozzarella Cheese, sliced
- Fresh Basil, shredded (optional)
Instructions
- Preheat the oven to 375 degrees
- Place the chicken down onto a baking sheet & season it on both sides with salt, pepper and garlic powder (optional).
- Spread the pesto on both sides of the chicken. Add the fresh mozzarella on top of the chicken and top with 1-2 slices of tomato depending on how large the piece is.
- Place it into the center rack of the oven for about 30 minutes or until the cheese is melted and the chicken is fully cooked. Serve warm and enjoy!
