Can I use fresh broccoli?

Yes you absolutely can use fresh broccoli.

I love the convenience of the frozen and thawed broccoli but fresh works very well here, too.

Just be sure to boil the broccoli in water for a few minutes (and drain it) before using it in the recipe.

You can steam it, also.

Can I use a different soup?

Sure you can use a different soup besides cream of chicken I’d you’d like.

Pretty much cream of anything would work. Just use your best judgment.

Cream of cheddar or mushroom would both be great choices.

Other topping suggestions

I personally love the texture and taste of the crushed Ritz cracker topping.

That doesn’t mean you need to use that though.

You can stop at the cheddar cheese topping if you’d like. That would be perfectly fine!

Breadcrumbs would be a great swap out for the crackers, too.

Broccoli Cheddar Casserole Ingredients

  • Frozen broccoli, thawed
  • Chopped onions
  • Cream of chicken soup
  • Cheddar cheese
  • Eggs
  • Melted butter
  • Salt & pepper
  • Garlic powder
  • Mayonnaise
  • Crushed Ritz crackers

Instructions

First, chop the broccoli up a little bit if you want ( you can leave them larger if you’d like, too) and add them to a medium sized bowl.

Then add the chopped onion and can of soup.

Next add the egg and season it with salt, pepper and garlic power.

Now add the mayonnaise and cheddar cheese.

After that add the melted butter and mix everything together.

Add it to a baking dish and top with more cheddar cheese.

Next add the crushed Ritz crackers and bake at 350° for 30 minutes.

Serve warm and enjoy.

Broccoli Cheddar Casserole

Super delicious and easy to make broccoli cheddar casserole is the perfect comfort food side dish recipe.

Ingredients

  • 4 cups frozen broccoli, thawed and rough chopped
  • 1/4 cup chopped onion
  • 1 10.5oz can Cream of Chicken Soup
  • 2 tbs Mayonaise
  • 1 1/4 cup Cheddar Cheese (save 1/4 cup for the topping)
  • 1 Egg
  • 1/2 sleeve Ritz Crackers, crumbled
  • salt and pepper to taste
  • 2 tbs garlic powder
  • 1/2 stick melted butter

Instructions

  • In a large bowl, add all of the ingredients except for the 1/4 cup of cheddar cheese and crackers.
  • Stir everything together and add it to a baking dish.
  • top with the remaining cheese and crackers. Bake at 350 for 30 minutes
  • Serve warm and enjoy!
