TACO BELL CHICKEN QUESADILLAS

Taco Bell Chicken Quesadillas are made with shredded chicken tossed a cheesy and slightly spicy sauce then served in between crispy tortillas.

Taco Bell chicken quesadillas are one of my favorite things to order on their menu.

The chicken is seasoned perfectly and goes together so well with all of that gooey cheese. Just thinking about it makes me want to eat some.

We love to make these quesadillas for a quick lunch or dinner when we’re in the mood for them but don’t really feel like driving to the restaurant. This recipe contains pickled jalapenos but don't worry, its not too spicy for the kids.

There’s nothing like some fast comfort food made right at home. Pair this with some homemade Taco Bell Quesadilla Sauce and you’ve truly got a meal the whole family will love.

They’re always a huge hit at my house but nothing beats these quesadillas. My boys just can’t get enough of them.

Taco Bell Chicken Quesadillas Variations

I like this chicken quesadilla recipe me just the way it is, but here are some ways to change it up if you’d like.

Just remember that this is a copycat recipe. So any changes will take it farther away from the Taco Bell version.

  • Tortillas- Flour or corn would both be ok to use here
  • Cooking- Baking these are an option, too. Just pop them in the oven at 400° for about 20 minutes. It’s a great idea to spray them with some cooking spray first, too.
  • Chicken- You can use shredded rotisserie chicken or any kind of cooked and cubed chicken.
  • Spice- The pickled jalapenos really do not add too much heat at all. Feel free to add more for a little more kick.
  • Cheese- Choose any kind of cheese that you’d like. Just be sure to shred it yourself because it will melt much better that way.
  • Dipping- Dip these in sour cream, salsa or this Copycat Taco Bell Quesadilla Sauce.

Taco Bell Chicken Quesadilla Ingredients

  • Flour Tortillas
  • Rotisserie Chicken, shredded
  • Mayonnaise
  • Diced Pickled Jalapeño’s (plus some juice from the jar)
  • Cheddar Cheese, shredded
  • Salt, Pepper, Garlic Powder, Cumin, Cayenne Pepper and Chili Powder

Instructions

First, in a large bowl, add the shredded chicken, mayonnaise, diced pickled jalapenos (plus some juice from the jar, and shredded cheddar cheese.

Then, season the chicken and stir everything together until it’s evenly combined.

Now, evenly distribute the chicken mixture onto the bottom of one tortilla. I like to add a little extra cheese on before I add the filling but that’s totally optional and up to you.

Next, place another tortilla on top of each one.

Then, in a large skillet, add a tiny amount of oil or cooking spray and toast the tortillas on both sides over medium high heat until golden brown.

Finally, transfer them to a cutting board, slice them into individual pieces and enjoy them with some Taco Bell Quesadilla Sauce or a mixture of sour cream and salsa.

This crispy Caprese chicken is the dinner that you absolutely need to make this summer.

The cool burrata cheese with the warm, roasted tomatoes and crispy cutlets is irresistibly delicious.

And believe me, I’m not just saying that either. I actually couldn’t stop myself from eating these. They were out of this world good.

Chicken Cutlets are a staple at my house and I make them for my family all the time.

We love to eat them plain, but I’m always looking for new and delicious ways to jazz them up. This recipe was perfect!

Not only is this dish unbelievably good, it’s also super impressive looking, too. All you really need to serve this with is some Homemade Garlic Bread and you’re good to go.

I made this for a casual family dinner at home but this would be the perfect thing to make for a dinner party or holiday.

I really hope you give this recipe a try. If you do, I know you’ll love it just as much as my family and I do.

Crispy Caprese Chicken Variations

I like this recipe for Caprese chicken made just the way it is, but here are some ways to change it up if you’d like to.

  • Chicken- I love my recipe for Chicken Cutlets but feel free to use your own or pick some up from you local Italian deli. You can also make this lower in carbs by using grilled chicken, too.
  • Cheese- I just love how creamy burrata cheese is but fresh mozzarella would be ok to use, too.
  • Balsamic- Aged balsamic vinegar or a balsamic glaze would both be great for this recipe.

Crispy Caprese Chicken Ingredients

  • Homemade Chicken Cutlets or Store Bought
  • Cherry Tomatoes- rainbow colored or red
  • Olive Oil
  • Crushed Garlic
  • Burrata Cheese
  • Shredded Fresh Basil
  • Balsamic Glaze
  • Salt and Pepper to taste

Instructions

Preheat the oven to 425°

First, add the cherry tomatoes to a baking dish, drizzle them with olive and add the crushed garlic. I made the mistake of cutting my garlic too small and some burned. So be sure to keep the garlic in larger pieces to avoid that mistake.

Now, season the tomatoes with salt and pepper then toss everything together until the tomatoes are evenly coated.

Then, place them into the center rack of the oven for about 20 minutes or until they are blistered.

Next, lay the Chicken Cutlets down onto a serving platter.

Now, add a scoop full of the tomatoes onto each piece of chicken.

Then, carefully slice up the burrata cheese and lay the pieces onto each of the chicken cutlets beside the roasted tomatoes.

Next, sprinkle the shredded basil on top.

Finally, drizzle the chicken with the balsamic glaze, serve and enjoy.

This Ritz cracker chicken casserole is one of the easiest and most delicious casserole recipes in my collection. Its right up there with my Chicken Cordon Bleu Casserole recipe.

This one really is a classic. I remember eating all kinds of different versions of this growing up as a kid and loved them all.

It’s super nostalgic for me whenever I make this. It always brings me right back to eating this at the dinner table with my brothers and sister after a long day at school.

But I do have to say that this one is my favorite. It’s my families, too. They all love when I make it for dinner.

We usually serve this on cool fall and winter nights but I promise that it’s delicious all year round.

The best part about this recipe, besides how delicious it turns out, is that it’s super easy to make, too. Everything comes together so easily and I can have it on the table in no time.

Ritz Cracker Chicken Casserole Variations

I love this recipe for chicken casserole made just the way it is, but here are some ways to change it up if you’d like to.

  • Crackers- you can omit the bottom layer of crackers if you’d like and just put them on the top. Make only half of what’s recommended in the directions.
  • Chicken- 3 cups of any kind of cooked and cubed or shredded chicken would be great.
  • Cheese- use any kind of cheese that you’d like. Just be sure to shred it yourself because it will melt much better that way.

WESTERN BREAKFAST SLIDERS

How amazing do these western breakfast sliders look?

My husband and sons love breakfast. It’s by far their favorite meal of the day.

On the weekends, we usually get bacon egg and cheese sandwiches from the local deli. Nothing beats a good BEC with SPK (NY/NJ people will understand what that means).

This particular weekend, I decided to jazz out breakfast routine up a little with these delicious sliders.

My family loved them and I did, too. Western omelets are a person favorite of mine so this really hit the spot for the both of us.

I love that these are super easy to make and a nice grab and go meal. They would be a perfect recipe to meal prep for the family.

Making breakfast during a busy weekday when the kids have school and we’re rushing to work can be hard. It would be so nice to just grab one of these sandwiches and go about the day.

The flavors go together here so well. I will absolutely be making them again and again.

Western Breakfast Sliders Variations

I like this slider recipe made just the way it is, but here are some ways to change it up if you’d like to.

  • Western Style- Omit the peppers, onion and ham if western style isn’t your thing.
  • Cheese- Any kind of cheese would work here so use your favorite.
  • Everything Bagel Seasoning- I highly recommend this seasoning. You can find it HERE if your local grocery store doesn’t carry it. Otherwise, sesame seeds or poppy seeds would be ok to use, too.

  • Eggs
  • Red Onion, diced

Instructions

Preheat the oven to 375°

First, spray a 9 x 13” baking dish with cooking spray, cut the Hawaiian rolls in half, and place the bottom half of the rolls into the baking dish.

Then, in a medium sized bowl, whisk together the eggs, bell pepper and onion. Add them to a large skillet with melted butter and scramble them.

Once the eggs are almost done cooking, turn the heat down to low, season them with salt and pepper and add the Swiss cheese.

Next, continue stirring the eggs until they are completely cooked and the cheese is melted. (The cheese will help hold the eggs together)

Then, add the sliced American cheese onto the bottom half of the Hawaiian rolls.

Now, evenly spread the scrambled egg mixture on top.

Next, top each individual roll with a cooked sausage patty.

Then, place the top half of the rolls on top.

Now, brush on the melted butter and sprinkle the Everything But The Bagel Seasoning on top.

Next, place the baking dish into the center rack of the oven for about 10-13 minutes. Please be sure to watch them because they can burn fast.

Finally, cut the rolls into individual portions, serve alone or dunk them into some maple syrup and enjoy!

  • Maple Syrup for dunkin (optional)

  • 4 Tbs Butter, melted
  • 2-4 Tbs Everything Bagel Seasoning

  • Spray a 9 x 13” baking dish with cooking spray, cut the Hawaiian rolls in half, and place the bottom half of the rolls into the baking dish.

These baked chicken leg quarters are juicy, delicious and always a big hit at dinner time.

Everyone loves a good roasted chicken dinner, right? Well maybe not everyone, but my family sure does.

When I saw these chicken leg quarters at the meat department of a local market, I knew exactly what I’d be making that night for dinner.

They were practically calling my name. So, I just had to scoop them up.

The seasoning on these is super simple and sometimes that’s all you need when you’re making a good quality cut of meat.

The skin should be crispy and the meat should be juicy and flavorful. It truly is the perfect combination.

This recipe is a fantastic comfort food meal to throw together on any day of the week.

It couldn’t be easier to put together and is a guaranteed crowd pleaser.

I usually serve this with a side of rice or Sour Cream Mashed Potatoes and a roasted vegetable like broccoli or Corn On The Cobb in the summer.

Put that all together and you’ve got a meal that truly the whole family will love.

Next, massage the seasonings into the chicken until it’s evenly coated.

Now, cover the bowl, and place it into the refrigerator for 30 minutes- a couple of hours.

When you’re ready to cook the chicken, preheat the oven to 350°.

Then, line a baking dish with the lemon and onion slices.

Now, place the chicken on top and top them with the pats of butter.

Then, pop it into the center rack of the oven, covered for 30 minutes.

Next, increase the oven temperature to 400° and baste the chicken in all the juices from the bottom of the pan.

Now, place it back into the oven, uncovered for another 25-30 minutes or until the skin is crispy and the chicken is cooked all the way through.

Finally, let the chicken rest for ten minutes before serving, add some of the sauce created when the chicken was cooking and enjoy!

  • ½ Small Onion, sliced
  • Salt and Pepper to taste
  • 1 Tbs Garlic Powder
  • 1 Tbs Onion Powder
  • 2 Tbs Parsley
  • 1 teaspoon Paprika
  • 1 Tbs Chicken Bullion

Instructions
 

  • In a large bowl, add the chicken quarters and drizzle them with olive oil. Add the salt, pepper, garlic powder, paprika, parsley, chicken bullion and onion powder.
  • Then, add the minced garlic, lemon juice and tomato paste. Massage the seasonings into the chicken until the legs are evenly coated. Try to lift the skin and get it under the skin, also.
  • Cover the bowl, and place it into the refrigerator for 30 minutes- a couple of hours.
  • When you’re ready to cook the chicken, preheat the oven to 350°.
  • Line a baking dish with the lemon and onion slices. Place the chicken on top and top them with the pats of butter.
  • Pop it into the center rack of the oven, covered for 30 minutes.
  • Increase the oven temperature to 400° and baste the chicken in all the juices from the bottom of the pan. Place it back into the oven, uncovered for another 25-30 minutes or until the skin is crispy and the chicken is cooked all the way through.
  • Let the chicken rest for ten minutes before serving, add some of the sauce created when the chicken was cooking and enjoy!

Stuffed cowboy meatloaf is guaranteed way for me to get my kids excited about dinner.

We love meatloaf around here. I make my Old Fashioned Meatloaf, Copycat Cracker Barrel Meatloaf and Stovetop Stuffing Meatloaf all the time during the cool fall and winter months.

There’s just something so comforting about this meal. My Mother used to make it for my siblings and I all the time growing up, too.

I loved it then and I love it now. Luckily for me, so does my family.

This recipe is a delicious spin on an old classic. The melty cheese in the center and BBQ sauce topping really just take this comfort food classic to the next level.

I know everyone in my house will be happy once they know this is what will be served for dinner.

We usually like to eat this with a vegetable like Roasted Garlic Parmesan Broccoli or Garlic Parmesan Corn On The Cobb and Sour Cream Mashed Potatoes.

I’m getting hungry just thinking about it! It’s a great stick to your ribs dinner that’s perfect for the fall but it’s just as delicious all year round, too.

Instructions

Preheat the oven to °350

First, in a large skillet, sauté the peppers and onions in the olive oil until soft and season them with salt and pepper. Let them cool slightly.

Now, in a large bowl, add the ground beef, ground pork, eggs, breadcrumbs, milk, Worcestershire sauce and the sautéed peppers and onions.

Next, season meatloaf mixture with salt, pepper and garlic powder and mix everything together until it’s evenly combined.

Quick tip- don’t over mix the meat or it will become too dense. Just mix into its combined then stop.

Then, add half of the meatloaf mixture into a baking dish and form it into a flat meatloaf shape.

Now, using your fingers, gently push down into the center to form a small dip/ hole. Do not push all the way to the bottom.

Next, add the shredded cheese into the center.

Then, add the rest of the ground beef mixture to the top.

Now, carefully pat the meatloaf mixture down onto the sides to seal the cheese into the center.

Next, brush the BBQ sauce onto the top and place it into the center rack of the oven for 40 minutes.

Then, carefully remove the baking dish from the oven and brush the top of the meatloaf with more BBQ sauce.

Now, place the baking dish back into center rack of the oven for another 25 minutes.

Finally, let the meatloaf rest for 10 minutes, garnish with parsley, serve warm and enjoy!

Million dollar baked rigatoni is a delicious and flavorful pasta the whole family is going to love.

I promise you that I’m not just saying that. It’s a very true statement, believe me.

My brother Keith and his wife, Sarah had a 2nd birthday party for my nice Sadie last week. Happy Birthday to her! Anyway, I wanted to bring a dish over to help contribute to the celebration.

Now, I’ve tried Million Dollar Spaghetti, Million Dollar Tortellini, and Million Dollar Chicken Casserole and those were all 100% hits.

Making a million dollar rigatoni just made perfect sense to be done next. And I have to say, I think this was my favorite out of them all.

The entire party agreed with me, too, I think. It was eaten up in no time at all.

I got so many compliments on it from everyone who was there. It was the perfect recipe to make.

If you need a delicious dinner to make for a family function or casual dinner at home, this one is it.

Million Dollar Baked Rigatoni Variations

I like this recipe for baked rigatoni made just the way it is but here are some ways to change it up if you’d like to.

  • Pasta- Use any kind of tube like pasta that you’d like. It all works.
  • Meat- Feel free to omit the meat if you’d prefer to make this vegetarian. You could also use ground pork or veal instead of beef, too.
  • Alfredo Sauce- I used Jarred alfredo sauce to save time but I also have a really great recipe if you’d like to use it CLICK HERE. Try Raoes if you’re going the jarred sauce route. It’s the best!
  • Meat Sauce- I highly recommend using my Meat Sauce Recipe but use your own if you have one.

Million Dollar Baked Rigatoni Ingredients

  • Rigatoni, cooked to al dente ( I used Mezzi Rigatoni)
  • Meat Sauce
  • Parmesan Cheese
  • Alfredo Sauce, jarred or homemade
  • Mozzarella Cheese, shredded
  • Ricotta Cheese
  • Shredded Basil
  • Oregano

Instructions

Preheat the oven to 350°

First, mix the pasta into the Meat Sauce until it’s evenly coated and combined.

Then, spread half of the pasta with meat sauce onto the bottom of a 9 x 13" baking dish.

Then, sprinkle the top with Parmesan cheese and pour half of the Alfredo sauce on top. Do your best to spread the sauce out evenly with the back of a spoon.

Next, add a layer of shredded mozzarella cheese.

Now, add the rest of the pasta with meat sauce on evenly on top.

Next, in a small bowl, mix the ricotta cheese and oregano together.

Now, take spoonfuls of the ricotta mixture and place them directly into the pasta, making little holes. They can be randomly spread out wherever you’d like. Just be sure to smooth the top over with the surrounding pasta when you’re done.

Then, evenly spread out the rest of the Alfredo sauce.

Now, add another thin layer of Parmesan cheese and the rest of the shredded mozzarella cheese.

Next, cover the pasta with foil and place it into the center rack of the oven for 30-40 minutes or until it’s hot and bubbly.

Just a little tip- spray the foil with cooking spray so the cheese doesn’t stick.

Finally, let it sit for 10 minutes, garnish with shredded basil and enjoy!

These ham and Swiss pinwheels are the easiest and most delicious little appetizer or snack.

Sometimes the more simple the ingredients, the more delicious the results. This recipe is a perfect example of that.

My brother Keith & sister in law Sarah were hosting my nieces 2nd birthday party at their home last weekend. Happy Birthday, Sadie Bug!!

I wanted to bring something that I knew everyone at the party would love. These were the perfect thing.

Ham and Swiss are such a wonderful flavor combination. How could anyone resist that delicious duo?

Bake them in between some pizza dough that’s been bushed with a buttery, mustard based topping and you’ve got a truly crowd pleasing appetizer.

These are wonderful to bring to any get together or make them at home for an easy lunch or snack.

Not only are they incredibly delicious, but they’re practically effortless to put together, too. That’s a win win if you ask me.

Institutions

Preheat the oven to 350°

First, roll the pizza dough out into a rectangle shape on a lightly floured surface.

Now, lay the slices of ham down side by side.

Then, lay the thinly sliced swiss cheese down on top of the ham.

Next, jelly roll the dough up and place it seem side down onto a cutting board.

Now, using a serrated knife, slice the dough into 1.5-2” pinwheels.

Then, place the pinwheels down onto a parchment paper lined baking sheet.

Next, place them into the center rack of the oven for 15 minutes.

Meanwhile, stir together the melted butter, Dijon mustard, Worcestershire sauce and poppy seeds.

Now, brush the mixture on top of the pinwheels and place them back into the oven for another 5-10 minutes or until the dough is cooked all the way through.

Finally, let them cool slightly, serve warm and enjoy!

Chicken pot pie pasta is the perfect cool weather comfort food to warm you up this season.

My family loves chicken pot pie. We often make Cheddar Bay Biscuit Pot Pie and Muffin Tin Pot Pie when the seasons start to change here in Jersey.

They are family favorites in my house for sure. I’m always looking for new and creative ways to serve this and this recipe was a hit right from the start.

It kind of reminds me of chicken pot pie and chicken noodle soup combined into one delicious dish.

The noodles in replacement of traditional pie crust here makes this recipe truly unique. Plus, it is a huge time saver.

Using noodles and shredded rotisserie chicken makes this recipe a breeze to put together.

I can have this meal on the table and ready to eat in under 30 minutes. That makes it the perfect choice for a busy weekday dinner.

This is a meal that you’re guaranteed to make again and again.

This chessman banana pudding is such an easy to make, delicious dessert that the whole family will absolutely love.

Banana pudding is such a classic dessert. This one tastes amazing and looks super impressive, too.

Instead of Nilla Wafers, the Chessman cookies bring such an interesting visual element into this already incredible sweet treat.

It’s also a really nice conversation starter. Especially if you’re taking it to a party or family get together.

The creator of this recipe is actually The Food Network star herself, Paula Dean. Thanks a million Paula!

But, recently people have been calling it the Gen Z Banana Pudding. Apparently they’ve taken quite a liking to it and I can totally see why.

Not only is this a beautiful and delicious to make dessert. It’s also super easy to make, too.

The only thing to keep in mind is that it does need some time to settle in the fridge. So, make sure you factor in that time if you’re planning to make this for any event.

Trust me, it’s going to be a huge hit if you do. I made this for my niece, Cora’s, second birthday and everyone couldn’t get enough. Especially her.

  • In a large bowl, beat together the instant pudding and milk. Let it sit to firm up for about 2-3 minutes.
  • In a separate bowl, beat together the sweetened condensed milk and softened cream cheese and stir it into the pudding mixture.
  • Fold in the whipped cream and add the mixture to the baking dish. Smooth it out so that the pudding mixture is flat and even.
  • Top the pudding with another layer of Chessman cookies and place it in the fridge for at least 6-8 hours. Overnight is best if you have the time!
  • Finally, serve cold and enjoy!

Lemon blueberry sheet cake is the super easy to make sweet treat that you're guaranteed to make again and again.

This one is sure to please any sweet tooth of the summer. The zesty Lemons and sweet blueberries go together so perfectly for a truly irresistible dessert.

I made this one for a Fourth Of July party at my house this year and it was such a huge hit. Both the adults and kids couldn't get enough of it.

My favorite part was how easy it was to put together. Using a boxed cake mix was such a great shortcut to take.

This would be a fantastic dessert to bring to any warm weather BBQ, picnic or party. It's super delicious and looks pretty, too.

Don't feel like you need to wait for a special occasion to make this, though. It would be just as wonderful to have as an after dinner treat. Maybe even better!

Regardless of the occasion, everyone will be asking for seconds of this sweet and tart dessert.

Then, using the back of a spoon, spread it out evenly.

Next, garnish with more blueberries and lemon zest and place it into the refrigerator to let it cool completely.

Now, use the long pieces of parchment paper to pull the cake out of the baking dish.

Finally, cut the cake into squares and enjoy!

Philly cheesesteak stromboli is such a fun lunch, snack or dinner.

In Jersey we love a good stomboli and cheesesteak. Philly is South Jerseys neighbor after all.

I make my Classic Stomboli recipe all the time for a whole variety of occasions. But, it is nice to switch things up every once in a while.

That’s where the mashup of these two classics comes in. It’s like the perfect combo of each.

Using prepared pizza dough saves me so much time. I can have this on the table and ready to eat in under 30 minutes.

My husband and two little boys absolutely love this recipe. My brother, Mark, who thinks he is a cheesesteak connoisseur went crazy over these, too.

Make this for an easy lunch, dinner or even a snack and it’s sure to be the star of the show.

Philly Cheesesteak Stromboli Variations

I like this stromboli recipe made just the way it is but here are some ways to change it up if you’d like to.

  • Steak- I get the already shaved steak at the grocery store but feel free to slice your own. Ribeye is typically best. Pop it into the freezer for a little to semi freeze it to make it easier to slice.
  • Cheese- “Real” Philly cheesesteaks use provolone cheese but use whatever cheese that you’d like. It all works!
  • Dough- Any prepared pizza dough would be ok to use for this recipe. I like to pop into my local pizza place and purchase my dough from them. It’s $2 for a large pizza dough and they’re usually very happy to sell it to me.
  • Add Ins- Add any kind of sautéed veggies like mushrooms to this recipe that you’d like.

Philly Cheesesteak Stromboli Ingredients

  • Pizza Dough
  • Flour
  • Shaved Steak
  • Sliced Provolone Cheese
  • Green Bell Pepper, diced
  • Onion, diced
  • Worcestershire Sauce
  • Egg
  • Sesame Seeds (optional)
  • Salt, Pepper and Garlic Powder

Instructions

Preheat the oven to 400 degrees

First, in a large skillet, sauté the chopped bell pepper and onion in a little olive oil.

Then, stir in the shaved steak and season it with salt, pepper and garlic powder.

Once the steak is almost browned, stir in the Worcestershire sauce until it’s finished cooking. Since the streak is so thin, this should only take a couple of minutes.

Now, on a lightly floured surface, roll the pizza dough out into a rectangle shape.

Next, lay down half of the provolone cheese, side by side and slightly overpallping, covering the center of the dough.

Then, place the steak mixture on top.

Now, place the rest of the provolone cheese on top of the steak.

Next, jelly roll the pizza dough and tuck the sides under the dough to keep the filling in place.

Then, place it seam side down onto a parchment paper lined baking sheet.

Now, brush the top of the dough with egg wash.

Next, sprinkle the sesame seeds on top.

Now, cut ventilation slits about every 2-3” apart.

Then, place it into the center rack of the oven for 15-20 minutes or until the dough is golden brown.

Finally, let the Stromboli sit for about 5 minutes to set, slice it into pieces and enjoy!

Everyone loves a good club sandwich and this little play on them is truly no exception.

They’re refreshing and filling without being too heavy. The perfect combination to enjoy under the sun.

So, keep these in mind for your next pool or beach day. Maybe pack them up with some Hawaiian Macaroni Salad while you’re at it. Yum!

The scallion cream cheese here adds lots of flavor plus it acts like a binder to keep these sandwiches sealed.

I personally love how the lettuce and tomato give it a fresh little crunch that really hits the spot on a hot day.

Italian wedding soup is the perfect marriage of homemade mini meatballs and pasta cooked in a flavorful broth for a cozy and satisfying meal the whole family will love.

Italian wedding soup is such a classic and cozy meal that’s perfect for a chilly fall or winter day.

I grew up eating this soup and make it often. That along with the other Italian classics like Minestrone and Pasta Fagioli.

With that being said, tell me why it took all this time for me to find out that the “wedding” part of soup isn’t actually referring to two people.

It’s suppose to be the perfect match of ingredients. That makes so much more sense then this being a ceremonial soup.

I love making this for dinner for so many different reasons. My top one being that it’s a one pot meal. Less mess for me!

The others include it being super easy to make, quick to have on the table and it’s always a crowd pleaser.

To be honest, we even prefer this meal on the second day. The flavors have time to settle in and it’s just so, so delicious.

Italian Wedding Soup Variations

I like this recipe made just the way it is but here are some ways to change it up if you’d like to.

  • Pasta- Any small pasta like Pastina, Daltini or Orzo would be ok to use. If you're looking for Acini Di Pepe you can find it HERE.
  • Chicken Broth- Substitute chicken broth for vegetable broth.

For The Meatballs:

  • Italian Seasoned Breadcrumbs

  • Parmesan Cheese

First, in a large bowl, combine all of the ingredients for the meatballs. Mix them, but don’t over mix them.

Now, roll them into tiny meatballs (about the size of a large marble) and place them onto a parchment paper lined baking sheet and place them into the center rack of the oven for 25 minutes.

In the meantime, melt the butter in a large pot and add the diced onion, carrots and celery. Season them with salt, pepper and Italian seasoning.

Next, sauté them until soft, stirring frequently. This should take about 7-10 minutes.

Then, add the garlic and saute for an additional minute.

Now, stir in the white wine and bring it to a gentle boil over medium heat for about 2-3 minutes.

Next, slowly pour in the chicken broth.

Then, season the soup with salt, pepper, garlic powder, Italian seasoning, thyme and rosemary.

I like to tie the rosemary and thyme in chicken string to make it easier to fish out later.

Now, add the pasta and let it cook in the broth for about 10 minutes or until the pasta is cooked. If the pasta has absorbed too much of the broth, feel free to add another ½-1 cup.

Then, stir in the spinach until it’s wilted.

Once they’re done cooking, add the meatballs to the sauce and stir them in.

Finally, remove the rosemary and thyme, serve warm, sprinkle with Parmesan cheese (optional) and enjoy!

You don’t have to take a trip to New York to enjoy these delicious and easy to make chopped cheese sliders. New York is home to the chopped cheese sandwich.

Luckily for me, I live in Bergen County, NJ. That’s about and north Jersey as you can get.

I can just pop over the boarder to grab one of these iconic sandwiches if I need to. But no need to worry.

You can make one right at home with ease. We do quite often actually.

If you’re unfamiliar, they’re basically like a cheeseburger delux but the meat is chopped into pieces. Thats how they got the name, Im sure.

They are perfect choice for an easy lunch, dinner or after school snack. And don’t even get me started on parties.

It’s the ultimate crowd pleasing appetizer. I’ve made these for so many events and they always the first things to go. They do particularly well on game day, too.

Chopped Cheese Sliders Variations

Then, turn off the heat and still in the shredded cheddar cheese. This will act as a binder and help the meat stick together.

Now, add the meat mixture to the bottom of the Hawaiian rolls.

Then, brush the top of the buns with the melted butter and sprinkle them with sesame seeds.

Now, place the baking sheet into the center rack of the oven for about 5 minutes or until the buns are toasted. Be sure to keep an eye on them. They can burn fast!

Once they are done, add a layer of shredded lettuce and diced tomatoes.

Then, drizzle them with ketchup and place the top half of the buns on top.

Finally, slice them into individual portions and enjoy!

  • 1 Package Kings Hawaiian Rolls
  • 1 Tbs Olive Oil
  • ½ Small Onion, chopped
  • 1 Pound Ground Beef
  • 1 Tbs Worcestershire Sauce
  • ¾ Cup Cheddar Cheese, hand shredded
  • Salt and Pepper to taste
  • 6 Slices American Cheese
  • 1 Tbs Garlic Powder
  • 2 Tbs Melted Butter
  • 1 Tbs Sesame Seeds
  • 1 Cup Shredded Iceberg Lettuce
  • 2 large Tomato, diced

Instructions
 

  • Preheat the oven to 350°
  • Slice open (horizontally) the package of Kings Hawaiian Rolls and place the bottom half onto a baking sheet. Place the top half down by its side.
  • Then, line the bottom half of the buns with sliced American cheese.
  • In a large skillet, sauté the onion in a little olive oil and add the ground beef. Season the beef with salt, pepper, garlic powder and stir in the Worcestershire sauce.
  • Turn off the heat and still in the shredded cheddar cheese. This will act as a binder and help the meat stick together.
  • Add the meat mixture to the bottom of the Hawaiian rolls. Spread it out evenly.
  • Brush the top of the buns with the melted butter and sprinkle them with sesame seeds.
  • Place the baking sheet onto the center rack of the oven for about 5 minutes or until the buns are toasted. Be sure to keep an eye on them. They can burn fast!
  • Once they are done, add a layer of shredded lettuce and diced tomatoes. Drizzle them with ketchup and place the top half of the buns on top.
  • Finally, slice them into individual portions and enjoy!

Bacon and peas pasta salad is the ultimate crowd pleasing side dish.

It’s creamy, savory, and its super easy to make, too. This is a must try recipe for any event you’ve got this summer.

The pop of peas goes perfectly with the smoky crunchy bacon, and the Parmesan cheese adds an irresistibly salty kick.

I absolutely love a good pasta salad. I grew up on my Mom’s Famous Tortellini Salad at almost every BBQ and family party of the summer.

This recipe was given to me a few years ago and I immediately fell in love with it. It’s so nice to change things up every once in a while.

I recently made it down in Lavallette, New Jersey, to celebrate my husband’s 40th birthday. We packed it up in the cooler to eat along with my Italian Summer Sammies and it was such a huge hit.

Everyone raved about it. This recipe is perfect for picnics, potlucks, or a no-fuss side dish to any meal.

Now, in a separate bowl, mix together the mayonnaise, olive oil, apple cider vinegar, sugar, salt, pepper, garlic powder, onion powder and parsley. Pour the dressing into the bowl of pasta.

Next, mix everything together until it’s evenly combined.

Now, cover the bowl and place it into the fridge for 2 hours so the flavors can combine.

Finally, toss everything together one last time, serve and enjoy! (If the pasta is a little too dry, feel free to add in a few more tablespoons of mayonnaise).

Mini blueberry cheesecakes are the kind of dessert that looks super impressive but are secretly so simple to make.

That’s exactly why I chose to make them for my husband’s 40th family birthday party this year. Happy birthday, Claude!

They were such a huge hit and everyone loved them. It’s nice to serve a grab and go dessert for parties so people can still walk around and mingle.

Plus, they really do look like they take a lot of effort to make. I assure you, they do not. If I can do it, you can do it!

And since they are made in a muffin tin, you get perfectly portioned little individual treats every time.

Which makes them easy to serve, share, or store in the fridge for whenever a sugar craving hits. Which for me is almost always daily.

The classic cheesecake filling paired with the graham cracker crust and sweet blueberry topping is a classic combo that tastes indulgent but light enough for any occasion.

Whether it’s a party, a picnic, or just a weeknight craving, these minis deliver all the decadence of cheesecake without the fuss of a full-sized one.

Mini Blueberry Cheesecakes Variations

I like this recipe for mini cheesecakes made just the way it is, but here are some ways to change it up if you’d like to.

  • Crust- The crust can be made with Nilla wafers or shortbread cookies. I’ve even taken a big shortcut and place a golden Oreo cooking right down into the cupcake liner as a crust.
  • Toppings- Any fruit pie filling would work great here as a topping. I did have strawberry for my party and they were wonderful.

For The Cheesecake

  • Cream Cheese, softened
  • Sugar
  • Eggs
  • Vanilla Extract
  • Lemon Juice
  • Flour
  • Sour Cream
  • Blueberry Pie Filling

For The Crust

  • Graham Crackers, crumbs
  • Unsalted Butter, melted
  • Sugar

Instructions

Preheat the oven to 350°

First, mix together the graham crackers, melted butter and sugar.

Now, add cupcake liners to a muffin tin and evenly distribute about 1-1.5 Tbs of graham cracker crust into each one.

Then, using the bottom flat part of a cup, press down to spread the crust out evenly and compress it.

Now, place the muffin tin into the center rack of the oven for 5 minutes to toast up a bit.

In the meantime, in a large bowl, add the softened cream cheese mix each ingredient in separately starting with the sugar.

Now, mix in each of the eggs.

Then, mix in the vanilla extract.

Next, mix in the lemon juice.

Now, the flour.

And end with the sour cream.

Then, evenly distribute the cheesecake filling on top of the crusts. You’ll have a lot of filling left, so expect to make a second batch.

Now, place the muffin tin into the center rack of the oven for 15-20 minutes. It’s ok if the center is a little jiggly.

Allow the mini cheesecakes to cool to room temperature before lightly covering them with plastic wrap and placing them in the fridge for at least 4 hours and up to overnight.

Once you’re ready to serve them, remove them from the cupcake liners and add about 1 teaspoon of blueberry pie filling on top of each one.

Finally, serve chilled and enjoy!

This viral lobster pasta is the kind of dish that feels luxurious without being fussy at all.

I think that’s probably why it became such a big bit hit on social media. Last year it seemed like everybody was hoping onto the trend.

The original recipe was made with all Trader Joe’s products. I don’t have one super close to me so I just used products from my local grocery store.

This dinner really was such a big hit. It rich, creamy, and loaded with sweet, tender lobster. Well, to guess that’s not exactly 100% true.

The Langostino Tails aren’t exactly lobster but they’re a very close cousin. The little mini tails are perfect for this recipe.

And please don’t second guess the lobster bisque here. I have to admit, I was a little hesitant, too. But, it was incredible!

The sauce clings to every strand of pasta, giving you that perfect bite of buttery, garlicky goodness with a hint of spice every time.

If you want a show-stopping dinner that feels restaurant-worthy but is totally doable at home, this pasta is it.

Before we even get into it, how incredibly adorable is this Easter carrot cheese ball?!

I don’t really see a ton of festive, Easter-themed food out there, and this is absolutely perfect.

It’s so quick and easy, too! Especially with the shortcuts we’re going to take in this recipe.

Making this cheese ball is all about minimal effort and maximum results. You just can’t go wrong with that.

Oh, and it’s delicious, too. That’s an important detail to mention.

I mean, it’s pretty much just a mix of various cheeses, crumbled bacon, and some everything bagel seasoning.

How could you not love that? This recipe is a guaranteed crowd pleaser for sure.

Easter carrot cheese balls make a great holiday-themed brunch idea, side dish, or appetizer.

They’re also super versatile.

How can I make this easter carrot cheese ball its best?

This is a pretty straightforward recipe, so there's not much to it at all. If you'd like to ensure it's at its best, I’d recommend doing the following.

Shred the cheese yourself. It’s a huge game-changer. The cheese is fresher, creamier, and overall, just a better choice.

Also, cook your bacon to perfection; aiming for the crispier side if possible. It definitely works better for this recipe. Here's a great method to cooking bacon if you'd like to check it out.

What if i dont have everything bagel seasoning?

Its no big deal if you don't have everything bagel seasoning. This stuff is fantastic, so I would recommend grabbing some if you come across it.

But not to worry if you aren't into it. Just season the cream cheese with a little garlic powder, salt, pepper, onion powder, or whatever you like.

You can even omit the seasoning completely if you prefer.

What cream cheese can I use?

The choice of cream cheese you’d like to use is up to you.

I used to take plain cream cheese and add all sorts of things to it, like chives and chopped vegetables.

Now, I just get flavored cream cheese to save myself the time.

I used chive cream cheese here, but veggie cream cheese is a great alternative, too.

Try jalapeño flavored if you’d like to bring some heat to this cheese ball.

I used whipped cream cheese, but if you opt for regular, be aware that it will be hard to mix and form unless it’s brought to room temperature first.

Do I have to use the bacon?

No, you don’t have to use the bacon if you’d like to make this cheese ball carrot vegetarian friendly.

Omit it completely if you’d like.

If you’ll miss the little crunch that the bacon brings, chopped walnuts would make a nice substitute.

Can this be made ahead?

Yes, you can make this Easter carrot cheese ball ahead of time.

If you’d like to make it the night before, mix everything together and form it into the carrot shape.

I’d wait to add the cheddar cheese to the cream cheese mixture and the parsley until it's time to serve, though.

  • Shredded cheddar cheese
  • Large bunch of fresh parsley

Instructions:

First, in a medium sized bowl, add the cream cheese.

Then, add the crumbled bacon.

Next, add the everything bagel seasoning.

Now, add the shredded Monterey jack cheese.

After that, mix everything together until it’s evenly combined.

Then take the mixture and add it to a serving tray, trying to place it down in a way that will make it easier to form into a carrot shape.

Clean up any smeared cheese on the edges using a paper towel or dish towel.

Next, cover the cream cheese mixture completely with the shredded cheddar cheese.

Finally, place a bunch of parsley at the top of the carrot to recreate the stem.

  • ½ cup Monterey Jack Cheese, Shredded
  • 2 tbs Everything Bagel Seasoning
  • ¾ cup Cheddar Cheese, Shredded
  • 1 bunch Fresh Parsley

Instructions
 

  • In a medium-sized bowl, combine the cream cheeses, crumbled bacon, everything bagel seasoning, and Monterey Jack cheese.
  • Mix everything together until it's evenly combined.
  • Place the mixture onto a serving platter and form it into a carrot shape.
  • Cover the cream cheese mixture with shredded cheddar cheese until it's completely covered.
  • Add the bunch of parsley to the top. You can insert it directly into the top, or alternatively, lift the end of the carrot where the parsley will go with a spatula, place the parsley down, and then position the cream cheese carrot on top.
  • Serve with your preferred chips. (For example, everything bagel pretzel chips as used in the recipe video.)
